Fruit and Nut Muffins

I love that there is so much apple in the recipe. Turns out more like a bunch of apples and nuts held together by a little bit of muffin. I replaced the oil with margarine and it came out fine.

Pumpkin Pancakes with Nutmeg Whipped Cream

These were great! I did not make the topping. Increased the spices just a bit and added pecans into the batter. The flavors were wonderful and the pumpkin flavor came through just right.

Mashed Potato Cakes

Very good! This is the first time I baked them. Usually I fry them in a pan. I definitely prefer baking. Only change was that I scooped 1/2 a cake onto the sheet, made a little well, sprinkled a little mozzarella cheese, and then scooped the other 1/2 on top for a cheesy surprise in the middle.

Turkey Pot Pie II

5 stars with changes. I followed the recipe except adding my own combination of veggies. Potatoes, corn, carrots, celery, and onion to total 2 C. I did not cook anything before putting it in the pie and it came out fine. Just chop everything small enough.

Ham Bone Soup

Great flavor, but a bit salty for my taste. Maybe 1-2 less boullion? Added carrots and celery, plus some cooked pasta at the end of cooking time. Husband loved it.

Pesto Chicken Florentine

I agree with a few of the earlier reviewers. It was just ok. It does seem a bit bland and needs something. I added red peppers and mushrooms, but it was still lacking in flavor. Maybe I needed a more flavorful alfredo sauce? More seasoning?

Indian Relish

This is amazing! Great sweet hot flavor and was a hit when I took it to work. I highly recommend adding some cornstarch to thicken it at the end. I also reduced the amount of vinegar and sugar. Must serve it by spreading some cream cheese on a plate and then spreading the relish on top. Very pretty too.

Black Bean Brownies

A friend of mine made these and then I HAD to make them myself the next day. Nobody could believe there were black beans in them. Tasted great! Do add extra cocoa. The texture is different and might be unexpected.

Simple Baked Apples

Awesome! Changes: doubled spices, sprinkled craisins and nuts on top so they wouldn't "sink". Serve with vanilla ice cream for a taste of heaven.

Awesome! I combine all ingredients ahead of time except the ice and store in the fridge. Pull it out and throw in the blender with some ice when I get the craving.

Meat Loaf Pie

Made this twice. First following recipe exactly except could not fit it all in. Maybe my crust was too small. Second time just threw corn, leftover crumbled meatloaf (Rempel's Family Meatloaf from this site), and leftover mashed potatoes on top and froze it. Baked it a few weeks later with a sprinkling of cheddar cheese and that worked great too.

Ricardo's Pizza Crust

Made in bread machine using entire length of dough cycle and on a pizza stone. Also baked the crust about 5 min. before adding toppings because of earlier reviewers saying their's was not done in the middle. Came out very soft and bread-like. Thick, soft crust with wonderful flavor. Would not recommend if you're looking for a crispy, crunchy crust. 4 stars ONLY because I prefer a crust soft on the inside, but crunchy on the outside. Any suggestions for achieving that?

Lemon Parmesan Spaghetti

Very good! Beware it is not your typical pasta and may not appeal to all. Many complained about it being "bitter". Really, how do you think it will taste when main ingredients are sour cream and lemon? I liked the flavor! It is also a "dry" pasta, but again, I didn't mind it and liked it just fine! My changes were adding two cloves of minced garlic and about a tablespoon of pesto just because I had those ingredients and like them.

Stuffed Blueberry Toast

Very nice, but I make some alterations to meet my preferences. I don't like a lot of filling so I get 2 extra "sandwiches" out of this recipe. Also, one more egg and less milk in the dipping mixture. The almonds and lemon juice are an important and delicious part!

Health Nut Blueberry Muffins

A "stick to your ribs" kind of muffin. Delicious and healthy. I make the following changes based on earlier reviews and my own preferences. 1 C. whole wheat flour and 1/2 C. all-purpose flour. I also eliminate the veg. oil. It really doesn't need it! I get 12 muffins out of it.

Pan de Muertos (Mexican Bread of the Dead)

I made this for my students when we were learning about Day of the Dead. I made it in the bread machine and it came out fine. The orange and anise flavor comes through well. Must eat it quickly though as it gets stale soon. I made 2 batches and the day old one was not even close to being good.
