Sweet Potato Bread

Yummy! I did make some changes though. 1/4 C O.J. instead of zest (didn't have any). Heavy on the sweet potato, oil, and applesauce. And reduced white sugar by 1/2 C. Also required little over an hour of bake time.

No-Cream Pasta Primavera

Excellent way to use those fresh summer veggies. Too bad it heats up the kitchen so much on those hot summer days roasting those veggies! Changes: no asparagus, 2 extra cloves garlic, no lemon zest, added some browned sausage, and used 1/2 the pasta because it makes sooo much and I wanted it healthier and veggie heavy.

P.J.'s Fresh Corn Salad

4 stars only because as written, it is not quite to my liking. I used only 1/2 tomato, cucumber, pepper, and zucchini. I put in very little onion. I like my corn salad to be mainly corn. I also added garlic salt, pepper, and basil. Delicious!

Extra Easy Hummus

I was looking for a tahini-free, easy hummus and this is it! Not the same as the local mediterranian restaurant, but a good substitute. The versions are endless too! Throw in some roasted red pepper, or sundried tomato.

Lazy Perogies

I wouldn't dare attempt traditional pierogies, but this is the perfect substitute. NOT healthy, but oh so good. My husband (who grew up on polish food) loves it.

Bubble Pizza

Love the ease and flexibility of this recipe. Throw whatever pizza toppings you want in it. It did come out a bit doughy for me (thus 4 stars), so I think I would either bake the biscuits some before adding the rest of the stuff or leave the whole thing in an extra 10 minutes.

Cheesy Pork Chops with Spicy Apples

My favorite way to eat pork chops. I love the apple, onion, and cheddar combination. When I made them the first time, I had way more apple/onion mixture that I prefer. Maybe my apple and onion were too big? I'd cut down on the toppings or throw in an extra chop. Oh, and the red pepper flakes are vital!

Slow Cooker Turkey Breast

Such an easy way to make turkey. I wouldn't make it any other way. Yes, I agree with earlier reviewers that it doesn't exactly look appealing when it's done, but if you put it under the broiler for a couple of minutes, problem is solved!

Baked Falafel

This is the first time I've ever made falafel and I don't need to search any further for other recipes. Very good and so easy. I just threw everything in the food processor. Didn't even bother squeezing the onion. I didn't have coriander so I just added a dash of curry powder for the heck of it. They were a bit mushy and had to handle them carefully until I got them into the skillet. I didn't bother with the oven. 5 min. on each side in the skillet. and they were nice and crispy on the outside. Served in pita pockets with Tabbouleh III (from this site) and Tzatziki (combination of Tzatziki Sauce I and II from this site) and was very happy with the results.

Becky's Chicken Salad

The only reason I gave it 4 stars is that it is much too salty as written. 1/2 the salt (or none at all) and it gets 5 stars. I also used half and half to cut down on some of the fat.

Pan de Muertos (Mexican Bread of the Dead)

I made this for my students when we were learning about Day of the Dead. I made it in the bread machine and it came out fine. The orange and anise flavor comes through well. Must eat it quickly though as it gets stale soon. I made 2 batches and the day old one was not even close to being good.

Health Nut Blueberry Muffins

A "stick to your ribs" kind of muffin. Delicious and healthy. I make the following changes based on earlier reviews and my own preferences. 1 C. whole wheat flour and 1/2 C. all-purpose flour. I also eliminate the veg. oil. It really doesn't need it! I get 12 muffins out of it.

Stuffed Blueberry Toast

Very nice, but I make some alterations to meet my preferences. I don't like a lot of filling so I get 2 extra "sandwiches" out of this recipe. Also, one more egg and less milk in the dipping mixture. The almonds and lemon juice are an important and delicious part!
