Red Lentil Curry

I am in love with this recipe! I have been making Easy Masoor Daal (also on this site) for years but was looking for other ideas for red lentils. This is so easy. I recommend investing in a mesh strainer for rinsing lentils. I have one that I bought during my quinoa obsession and it works great for both. Get one that is small enough to invert directly into the pot you'll be cooking your lentils so you can just bang it against the sides of the pot to release the lentils rather than dealing with spoons. As another reviewer pointed out, wet lentils stick to everything! I served this with plain yogurt for my kids to tone it down a bit. Next time I'll remember the cilantro and I will see if I can find Indian red curry paste. I used Thai, which was fine, but this is an Indian recipe so I want to see if it can be even better. Thank you to the reviewer who suggested doing this in the slow cooker!

Thai Curry Tofu

Great family recipe. Two of the three kids ate it! Next time I'll hold back a bit on the seasoned salt. My husband and I like a little more zing to a curry so we added red pepper flakes at the table. A keeper!

Burrito Pie

This is such an easy, yummy way to serve all your Tex-Mex favorites in one dish! I have made this several times now and probably will for the rest of my life! I use soy crumbles instead of beef and salsa instead of taco sauce. Also, I definitely agree with another reviewer to spread the bean mixture directly onto the bottom side of the tortillas . So good!

Beefy Lentil Vegetable Soup

Great easy recipe that even my kids enjoy. We are vegetarian so I used soy crumbles which worked very well. I also added a cup of eggplant diced extra small just to have more fresh veggies in there.

Roasted Beets and Sauteed Beet Greens

Never knew the greens were edible but they're actually quite good! Perfect crunch/ chewy feel. I did add some feta and mixed the beets with the greens so I could serve it all in one dish. Yum!

Spinach Quiche

So good! I used fresh spinach and I think it worked just as well- just sauteed with a little garlic and olive oil. I think next time I will cut the cheddar down- it seemed plenty cheesey!

Easy Masoor Daal

I am madly in love with red lentils and love this dish. But I am confused about the ginger. What exactly are you supposed to do with it? I don't understand what is meant in this recipe by "one slice... 1 inch piece). Do you remove it and toss it at the end? I usually just grate my ginger and mix it in. Please advise!

Vegetarian Moussaka

Fabulous. I skipped the gated parm and it was still delicious. I'll share my steps b/c I think I made it easier than recipe called for. First, I baked all the sliced veggies (except for the tomatoes) rather than frying anything. It took about an hour for them to cook thoroughly. I doubled the amount of tomatoes- used a 28 oz. can of diced- and simmered them with the lentils and approx. 1/2 cup of bean liquid I had from another recipe. The lentils were soft after about 20 minutes. Then, I put it all together with feta mixed throughout. I didn't follow the layering steps- I just topped it with the sauce. Voila!

Tofu Turkey II

Fabulous! Loved this! Great flavor, and I am a bit of a flavor snob. I took one reviewer's suggestion and skipped Step 2, and just used a store bought stuffing. I used Strawberry All-Fruit rather than orange jam fro the glaze and it was great. My only problem was that it cracked when I inverted it onto the baking sheet. I tried to mend the crack, and it only made it worse. I was thinking it was "mendable" like dough, but it really isn't. Once it's cracked, it's cracked. But it was still great and I will definitely make it again!

Yellow Squash Casserole

Simple and very quick, and even my kids ate it so I can't complain! But it did have almost too strong of a butter and cheese flavor. I think both could be cut in 1/2 and it would be fine. I used the Vegetable flavored Ritz which probably added flavor.

Butternut Squash Bisque

Loved this soup! I followed someone's advice of boiling the squash for 4 minutes to ease the peeling process and it really helped. My three year old even loved it. Next time I will use a blender because when I poured it into the food processor it leaked miserably.
