Pumpkin Cranberry Bread

I was looking for something simple to go with coffee on Thanksgiving morning. I made this without the cranberries & nuts. It was absolutely perfect!

Pecan Pie Bars I

These came out perfect with lots of positive feedback. I didn't have a problem with the crust as others have noted. If it was too thick or crumbly your pan may be too small &/or you did not pack the crust down enough before adding the filling. I cooked mine longer- but that was the only change I made!

Addictive Pumpkin Muffins

This is the first GOOD muffin recipe I found that works well for king size muffin pans (makes 12). I would reduce the nutmeg, it is a bit over powering, & increase the cinnamon. Next time I might try adding whole cranberries!

Italian Herb Bread I

While yeast was activating (& later when dough was rising) I sat the bowl on a warm heating pad for even, consistent temprature. I let it rise all day & divided it into 4 small loaves. I also replace all of the dry seasonings with 3 Tablespoons of Italian Seasoning & teaspoon garlic powder. It was just simpler & it contains a few more Italian spices, giving it more depth. I highly disagree that it was hard to kneed. I have bursitis in both shoulders & wrists & this recipe never once became a problem. Delicious! The small loaves make great soup/dip bowls!

French Breakfast Puffs

Very tasty & so quick to make, though they are muffins, not puffs! The only change I would make is to reduce salt from ½ to ? tspn. I'm not sure if this will effect leavening (the baking powder should be enough). Like many, I cook & bake to control salt for my low-sodium diet!

Angel's Chunky Chicken Salad

I enjoyed this recipe. I don't like pickles/relish in my chicken salad so I omitted that. I also used a store bought, cooked rotisserie chicken which I found on sale as it is more flavorful!

Sam's Famous Carrot Cake

I made this in a Bundt pan (reduce temp to 325° & cooked 10 min. more). If you have a coconut hater like I do try chopping it really finely. I'm not sure why a few people rated this so badly. I made no changes to the recipe & it was a family favorite. My guess is that they made it wrong! I found a very good cream cheese frosting from Food Network that is much better than anything I found here. Maybe that makes a difference. Awesome recipe Sam (& Brian)!
