Red Velvet Cake II

Reviewed: Sep. 4, 2011
I made this cake for the labor day holiday and it all left at my gathering. I thought the cake was pretty good. I gave it four stars because the cake was not as moist as I would have preferred. It was a little dry but the icing was great. I did as some reviewers suggested and the only thing I changed was to add one tbs of cocoa. This recipe is very simple and I will make it again because it was a huge hit!! Thanks for sharing Rhonda

BLT Macaroni Salad

Reviewed: Sep. 4, 2011
Great!!! I read a lot of reviews and I reduced the sugar and vinegar and I thought it was just great. I do agree with lots of other members that you should make extra mayo mixture because it absorbs after sitting for a while. overall a great great recipe!!!!

Peach Cobbler

Reviewed: Aug. 20, 2011
I made this and the base of it was great. I took the advise of another member and doubled the fruit and doubled the juice as well. Next time I will cut the butter in half and maybe the sugar down to 3/4 a cup for the batter and just a light sprinkle for the top. Its a bit sweet but a good recipe.

Coconut Pie

Reviewed: May 8, 2011
Great recipe! It was a bit sweeter than I prefer. Otherwise it was good. I made it a second time and did 3/4 cup a sugar and like most recipes for coconut pie I used 1 teaspoon of vanilla extract, a 1/4 is way to little of an amound. Im also a unhealthy butter fan so I used 2-3 table spoons of butter the second time around. but I rate the original a 4 star. great recipe. And also I read one review that said it was soggy, runny. try letting it cool and settle first. Real coconut pie will be moist as it it suppose to be.

Lemony Sweet Potato Pie

Great recipe! I turned to this recipe because my mom made her pies with lemon only. Great and delicious! I did leave out that water since the pies will retain some water from when they are boiled. Excellent!!!

Five Flavor Pound Cake I

Reviewed: Apr. 25, 2011
Great recipe. This is a great recipe for a 5 flavor or for a one flavor such as vanilla, lemon, or rum cake. Just double the particular flavor only that you want to use. For the people that rated it as spongy im sure they tasted it straight out of the oven. After 3-4 hours it has set and it it dense, moist, perfect, and bakery quality. I sifted powdered sugar on top and my family loved it. Also I recommend using a good quality bundt, tube, or loaf pan!. I recommend Calphalon products which can be found at Bed Bath and beyond, Macy's and any other nice retailers. Also I use a Kitchen aid stand mixer. Remember you cant expect professional taste and quality using cheap pans and a $5 mixer. You do get what you pay for. The good non-stick pans really are worth it. No problem sticking. I just lightly spray with Pam. Also I had to cut the cooking time down to 1hr and 20 min and the edges were just slightly over brown so please stick that knife in to check after an hour and 10 mins and watch it! Ovens vary so you can just take the time on a cake recipe and go with it. Good Luck. Thanks for the great recipe.

Extreme Banana Nut Bread 'EBNB'

Reviewed: Apr. 23, 2011
I just decided to rate this after using this recipe since 2008. It's great. I just say that I have to shorten the cook time as well as lower the cook temp to about 325. I love it. For the people who rated it low, make sure you are doing everything correct such as sifting as well as using all purpose flour instead of self-rise. This makes a big difference.
