Lime Chicken Soft Tacos

Great recipe! I followed another reviewer's suggestion and boiled the chicken..then chopped it and sauteed it in the sauce until absorbed. I did replace the oregeno with ground cumin b/c I think it makes more sense. Once I made this recipe with lemon juice instead of lime b/c that's all I had, it was still great. I have also added additional veggies to the saute...jalapeno, bell pepper, zucchinni...The chicken and seasoning are the core of the recipe and it's fantastic...there's so many ways to personalize this recipe. It's a keeper!!

Corn Dog Muffins

This was not a hit with my kids. I used Ballpark turkey dogs and I think they expanded too much...then later contracted leaving large gaps in the muffins. Maybe cheaper hot dogs cut up into smaller pieces would have worked better. If I were to ever make this again, in addition to the changes mentioned above, I would add honey to the batter.

Masala Chai Brownies

This brownie recipe is great! The Chai flavor is as promised, subtle. I love the coconut too. My kids loved it but my Chai loving South Indian husband hated it. Still I give it 5 stars :)

Curried Zucchini Soup

It was good. I wouldn't go buy zucchini just to make this but I will make and freeze this with the extras from my garden. I agree with others who said this soup needs more substance. I thickened it with potato flakes and served with a dollup of yogurt. There is a lot that can be done with this as a starting point, but as a stand alone soup, for me, it was just okay.

Chutney Chicken Salad

Delicious! I used Miracle Whip instead of Mayo to cut down on fat/cal. I didn't add the chutney, instead I served it with different chutneys on the side and let everyone add their fav chutney. My favorite chutney for this was mint chutney. I also tried it with Spicy Tomato Chutney from this site. That was good. This recipe is also good without any chutney at all.

Baked Potato Soup

Delicious! I made the recipe w/o bacon, fried the onions & garlic in evoo. I added 2 full cans broth and then thickened the soup with mashed potato flakes. Next time I'll add less salt (maybe my broth was too salty? even my 5 year old said it was too salty). I worried that the potatoes wouldn't soften but they did no problems. Maybe I'll blend it a bit with an imersion blender so no chunks. Nice recipe, I see lots of ways to customize, I can't wait to make it again.

Kay's Spaghetti and Lasagna Sauce

Excellent, I loved it! I waited until the end to see if it needed sugar, it didn't. Great sauce! Edited to add...This is still my fav sauce recipe. I often add zucchini and/or spinach to the sauce and puree with an immersion blender before adding the meat. Easy sauce!

Chickpea Curry

Delicious! I drained the chickpeas before I read the entire recipe. I added chicken broth for liquid and then a little cream at the end to get more gravy. It was flavorful, easy to make and my Indian family members loved it. I served it with rice and Trader Joe's Garlic Naan.

Homemade Black Bean Veggie Burgers

Good...but they crumbled. I used 1/2c oats and kidney beans instead of black b/c that's all I had. I rinsed and dried the beans and put the pepper/onion mix in some cheese cloth and squeezed the excess water out. I put the patties in the freezer to firm up. I started out baking them but they started to crumble when I tried to flip them after 10 min so I moved them to a fry pan with some olive oil. That didn't help they still crumbled. So what I did was crumble up the rest of it and put slices of cheese over the mixture and cover until the cheese melted. The melted cheese held the crumbles together so I was able to transfer something resembling a buger onto the bun. What we didn't eat on a bun, we put on top of some tortilla chips and cheese, it was fantastic. I will try this recipe again with black beans and an extra egg for a burger, but I'll probably even make it again as a topping for nachos. The crumbly bean mixture was an excellent topping.

Tasty Buns

Very easy to make...but just so so as far as flavor. I made them to use with veggie burgers and I thought they were too dense. The flavor of the veggie burger was lost in this dense bland bun. I even tasted a warm bun out of the oven with a little butter and it was so bland. I don't think I'll make this again.

Moroccan Potato Bean Soup

Very flavorful. We love spicy food but were happy with the recipe without the cayenne. In addition to the kidney beans and potato, I added a can of garbanzo beans and some steamed cauliflower & skipped the potato flakes b/c I didn't have any. It was a good recipe, I'll make it again with modifications.

Chole Saag

Wow! This was really delicious!!! I subbed heavy cream for the yogurt just because I had some that I needed to use up. I added the broth, spinach and peas to the onions and used a hand blender to blend about half of the mixture. Then I added the chickpeas and cream. Next time I'll use yogurt. My South Indian husband LOVED the dish! I usually prefer my veggies raw; never in a million years would I have thought I would love a dish with cooked spinach and peas but this recipe was really really good. I think I even like it better than Saag Paneer.

Pita Chips

These are great. I keep it simple, whole wheat pitas sprayed with butter flavored Pam and sprinkled with sea salt. I cut the pita in half, slide a pizza cutter into the half and split the pita...I don't like thick pita chips. Always served with our fav hummus (Curried Hummus on allrecipes).

Fry Bread Tacos II

Rating the fry bread only. Great fry bread recipe. I use corn oil to fry it and I sub 1/2 cup of whole wheat flour for 1/2 cup of white flour. My family prefers the whole wheat version. I hate frying so I usually double the recipe and freeze a ton of fry bread at one time. These are also fantastic served warm brushed with melted butter and honey...similar to (if not the same as sopapillas)

Spicy Tomato Soup

I would have given this 3 stars; my Indian husband would have given it 5. Be careful adding salt...some tomato sauces have salt added already. I used half the sugar and chili powder (I buy cp from the Indian grocery..it is hotter) called for in the recipe. I blended the soup with a hand blender and added leftover cooked basmati rice and chopped cilantro. Next time I think I'll leave out the cream and serve it with a dollup of yogurt and sprinkle with chopped cilantro in the style of our fav mulligatawny recipe. I might also try this with coconut milk instead of cream. Even with half the chili powder, my kids thought it was too spicy, but again my Indian husband loved it. We'll make it again with adjustments.

Butter Chickpea Curry

Delicious! I subbed steamed chopped cauliflower (1/2 head) for the potato; 1 can chopped tomatoes with jalapeno for the tomato soup; 1 can coconut milk for the cream; ginger paste for the ginger powder; red onion instead of yellow and olive oil instead of canola and I added chopped cilantro at the end and served it with choice of basmati rice or naan. I tolerate raw cauliflower and HATE cooked cauliflower but I thought this recipe, cauliflower included was wonderful. It's very flavorful, not too spicy and my South Indian husband LOVED it.
