Maple-Brined Pork Loin

MOIST!!!!!! Was that the brine?? I did have it in the brine for longer than 10 hours...maybe 12 and it was not salty just increadibly moist. Will definitely only cook pork tenderloin this way from now on. Melt in your mouth!!! Roasted it on the bar-b-que on high then slowly for about a half hour after - basting throughout. Thank you so much Chef John!!!

Best Chocolate Chip Cookies

Added 1/2 tsp creme of tartar like the chef reviewer suggested and these turned out "tight and high" not spread out and flat. And hard! Just as I prefer them. Didn't do the water/baking soda thing...what is that all about??? Took more like 20 mins to bake through. Perfect!!

Slow Cooker Stuffing

Wow! I used the driest bread possible (a year old) and the liquid was waaaaaaay too much. Mine too was a soup. I tried drying it out in the oven but by that time it was all mush - couldn't tell the difference between the bread and the other ingredients. I'll stick with my family's trusty recipe and bake my stuffing in the oven.

Best-Ever Texas Caviar

Oh this is soooo yummy. My family couldn't stop eating it at Thanksgiving. They were almost too full for turkey! I did make changes as I see many have. I used 2 cans of mixed beans, a "bunch" of cilantro which was probably a little over a 1/4 cup, half a medium red bell pepper and half a green one and a whole small red onion. I used about two tablespoons of pickled hot jalepenos, 4 cloves of garlic finely minced and substituted lime juice for the rice vinegar. I also omitted the sugar so didn't cook the mixture first just shook the lime juice and o o in a bottle to emulsify. I also made it the day before to let the flavours meld. Was a real hit and so much less expensive to make than our other favourite - seven layer dip! Easier on the waistline too!!

Herbed Pork Roast

This was only "OK" for me. Maybe I didn't use enough spices? They were fresh (not old) dried spices that I used but I didn't find that there was a lot of flavour. Maybe I am too used to the plain pepper, salt and garlic rub I usually use. I'll keep looking.

Mini Meatloaves

I found the oats made the loaf very mushy. I even added about a half cup of bread crumbs as the mixture seemed too loose to form into loaves. I'll keep looking and leave out the oats for sure.

Michelle's Coconut Chicken Curry

Just wasn't what I was hoping for. I'm guessing it's because while I'm preparing and cooking this, I'm getting such strong aromas from all the spices that by the time I'm ready to eat it, the flavour isn't as strong. Maybe this is why the leftovers tend to taste so much better ??

Kitchen Sink Cookies

I also had peanut butter chips so added them with walnuts instead of pecans and added raisins. Next time I'll add chopped dates. So versitile I'm thinking I'll make an "all fruit" one (dried cranberries,dried blueberries, raisins, dates with nuts) and a "peanut butter cup" one with peanut butter chips and chocolate chips...so many different ways to make these!!

The Best Meatballs You'll Ever Have

Good. The "best"? I wouldn't say so, but a fairly tasty recipe. I would like to have had some sort of sauce covering them or for dipping (perhaps should have come up with something myself) as they just needed "something". I'll keep looking and/or tweeking this recipe to find a sauce; perhaps a worcestershire sauce with butter and ??

Mom's 'Sweet 'n' Sours' Pork Ribs

Used all brown sugar and not sure if that made it too sweet, but found it a little too sweet. Would like to add some cayenne next time as well to give it more of a kick. But very good as is!
