Grilled Bacon Jalapeno Wraps

Creamy, spicy and blanketed with crispy divine swine. How much better does it get? My variation has some grated cheddar and a touch of minced garlic mixed in with the cream, cheese. Even with the variations, this is a WONDERFUL munchie. Try it and then make it your own.

Pesto Cheesy Chicken Rolls

Another Hit! In addition to following the given recipe I, also tweaked it. The basil pesto was wonderful. I also had some sun-dried tomato pesto and used that in two of the chicken rolls. I also used panko on half of each variety. Very simple with little difference in the ingredients, but each one had a different burst of flavor.

Caprese Appetizer

Just a simple twist on an old classic recipe and you really can't go wrong with this. I am of the opinion that no food is perfect without garlic but unfortunately, not everyone shares my view. So...I often begin by cutting a garlic clove in half and rubbing the cut side on the serving dish. It provides the wonderful aroma of garlic and only a hint of flavor. I also like to add a light drizzle of balsamic vinegar.

Green Chile Beef Tacos

Gotta love it...4 ingredients. I was trimming this roast...very dense, firm and what I felt would be inedible. I used ONLY the listed ingredients.... extremely RARE for me but I restrained myself. In absence of the bi-focals I left it in the crock-pot for 14 hours rather than 4. That inedible piece of meat is the tastiest thing I've eaten in a long time. The beef soaked up all the broth and salsa and although I like it hot, the spiciness was evened out by the extended cooking. Next on the list is chicken and pork. As stated in prior reviews, this can be used in many different dishes....tacos, enchilladas, salads, flautas. Simple and inexpensive.

Awesome and Easy Creamy Corn Casserole

This was an excellent addition to our Thanksgiving meal. Even the picky eater loved it. I added some minced onion and chopped red and green bell pepper. It added to the flavor and gave it a festive appearance. I doubled the recipe, using a large casserole dish. It required more cooking time which made the edges a bit crispy. Next time I will bake two batches.

Ultimate comfort food. I viewed several versions of this recipe and there was a slight variation in them. I combined the goodness of all and the result was amazing. I love potato skins so I left them on. It added more texture and flavor. I opted for leeks and added a bit of sour cream. What's not to love?
