Thanksgiving Meatloaf

I'm only giving this 4 stars because I changed it so much. It definitely tasted like 5 stars. I love reading everyone's reviews and getting ideas! I cut the recipe in half, added half an onion, two shredded carrots, dash of garlic pepper, half a can of cranberry sauce, two big squeezes of ketchup and mustard, and spread cranberry sauce over the top. I also used one cup of cornbread stuffing instead. This was so sweet and delicious! I'm the worst meatloaf maker in the world and everybody loved this!! Thanks!!

Coconut Tofu Keema

Wow! I tried to cook Indian many times before and it never turned out... until tonight! This was so good and flavorful. I couldn't believe it because the ingredients were so simple. I didn't have red pepper paste so I just cut up some peppers and put in a little crushed red pepper and chili powder. I probably tripled the curry powder too (I never measure). I used light coconut milk, just because that's all I had and two cans of tomato sauce. It made a ton! Next time I'll probably only use one can of tomato sauce and a half can of coconut milk. Only feeding two. I'm so glad I finally found an Indian recipe that I can tackle. I will definitely make this dish again!

Banana Oat Muffins

These are so delicious and healthy! I eat one for breakfast every day! I use a mix of oats, barley, and rye. I also put 1/4 C white and 1/4 C brown sugar. 1/4 C of ground flax meal too. I use cinnamon apple sauce in place of the oil. I also add cinnamon, nutmeg and cloves to the batter. My favorite spices. I'm going to try making it with pumpkin today in place of the bananas. Thanks!

Hearty Chicken Tortilla Soup

Made this last night, eating left overs right now... Love it!! I can never follow a recipe to a T though, so I made some changes. I cooked the chicken with some onion that I had left over. I also added a can of tomatos, I used about a cup of rice, and added a little cinnamon to give it that "hmmm what is that?" perfect!! I'll make this again. I baked my own tortilla strips, but next time, I'll probably just use store bought. Too much time, and I burnt the first batch... oops. Wonderful soup though! Thanks!!

Ono Butter Mochi

Amazing! I followed the recipe exactly and it turned out soooo good! The edges got a little crispy, but thats the best part! I love how the coconut rises to the top and makes a nice crispy topping. Will definitely make this again! Thanks!

Wonderful Banana Cake

Wonderful and so easy!! I used 4 bananas, which was too much. Next time, I'll just use 2. I also made my own cream cheese frosting... nummy!! I just baked it at 350, for about 40 minutes, or whatever it says on the box. Turned out great!
