I'm a heavy equipment operator,for 19 years. I'm off in the winter,from middle of November until April. I don't call it unemployment, I call it unenjoyment! I get to spend time w/ my family and friends and love being in the kitchen. We all enjoy creating and trying new recipes,most of all we enjoy eating really good food!

Slow-Cooker Chicken Tortilla Soup
During the worst winter the Midwest has had in many years, my thoughts were "Time goes so fast and it will be spring before we know it. But in the mean time make some soup!" I found this recipe and was everyone's hero. I tweaked it just a little....I had boneless chicken breast that I cut in bite-size pieces and seasoned and browned in a skillet. I added the chicken broth to the pan to catch all the browned bits and then poured in the crockpot.I didn't have the canned chilis so used a can of Rotel tomatoes. I added a can of drained rinsed black beans. Didn't have tortillas so used tortilla chips. Served w/ avocado,cilantro and cheese. Yummy!!!!

Brennan's Irish Soda Bread
Made this for authentic Irish meal,served it w/ Bangers and Mash.... wonderful!!!! Only needs 30 minutes in oven. I make this a few times a week now, haven't bought bread in months, the grocer can keep his $3.00 a loaf bread!

Slow Cooker Tapioca Pudding
Easy Peasy.....and very comforting! Mix very well @ start and don't forget to stir every hour or so. Stir in handful of chocolate chips for Chocolate tapioca.
