Chocolate Cake III

The only thing that saved this recipe was the frosting melting into the cake idea. And even then it wasn't very good. It was dry, didn't have much of a taste, and didn't rise well at all.

This are great. Perfect when you need a large batch for a party, bake sell, etc. and don't have a lot of spare time. It's also fun to experiment with different additives.

World's Best Lasagna

Wow, this lasagna certainly earns it's name. It take a little extra time but I make it in bulk, one for dinner and one to freeze for later. I used a whole pound of lean ground beef and a pound of cheese, omitted the fennel seeds, and let the sauce simmer for a couple of hours. This last time I also tried the advice of letting the noddles cook in the oven with a little extra sauce. It holds it's shape better but was a little tougher than I liked. I think I'll stick to precooking the noddles

Shredded Beef Enchiladas

This recipe is wonderful. I'm a huge mexican cusine lover, however my husband is a little more picky. I've had a hard time finding a recipe that is spicy enough for my taste that he still enjoys. This was certainly it. Even my daughter ate it up! I can't thank you enough for sharing this recipe! It is so hard to find a meal all three of us enjoy.

Extra Easy Fudge

A great basic fudge. My husband loves cream cheese icing with coconut. My favorite is chocolate fudge icing with peanut butter chips. I do add a little milk to the chips while they are melting. It's extremely unhealthy (but then again what fudge isn't?) but the good thing is, it is so rich you can eat one piece and be satisfied. Leave it in the fridge until serving, other wise it loses it's firmness and turns back into an icing consistency.
