Teena's Spicy Pesto Chicken and Pasta

I decided to stay true to the recipe. I also sprinkled crumbled goat cheese in at the end as was suggested as an option. It was yummy and creamy. Real comfort food!

Strawberry Muffins

Turned out great! Did add a little more strawberries because I had them and didn't want to waste them. Also, added some vanilla and cinnamon because we are fans of both. I know my kids will be asking for more as soon as they are gone!

Orzo with Parmesan and Basil

Great! Easy! Did exactly as written, except I added a chopped clove of garlic with the butter in the beginning. Had the garlic and needed to use it. My oldest daughter is picky and she LOVED it!

Meatball Nirvana

Little crunchy on the outside, perfect on the inside. Kids ate them plain and loved them. Husband and I had them with marinara. Great recipe. Next time will double recipe and freeze half.

Simple Scones

Made the orange and cranberry version. Followed the recipe exactly. Will add more cranberries next time. Used the zest of almost the entire (medium size) orange. The hint of orange was great. Very good! Just made again and this time I used my kitchen aide I will definitely go back to doing it by hand. Not much harder and I felt like I overworked my dough with the mixer. Also tried with fresh cranberries. Will toss them in sugar next time. Were pretty tart.

Juicy Roasted Chicken

Just made my first roasted chicken. It was soooo good. I can't believe a chicken roasted uncovered could be so moist. Followed the recipe exact except used butter. I only had butter. It was fantastic!

Banana Oat Muffins

Very moist. Did add 3 bananas, not sure if it was more than a cup. Added walnuts and it was good. I may reduce the heat next time as others suggested. I feel the outside cooked too fast compared to the middle. Will save and make again!

Easy Baked Tilapia

The taste is good. I have made several times exactly per recipe. I think I need to try cooking it uncovered. The fish sometimes is mushy. Kids love it... When it is not mushy :)

I found 20 minutes was too long. I also found them a bit bland. However, I am going to give them another try just to make sure it was not user error. Leftovers will make good pork fried rice! ;)
