Basic Crepes

Okay so I followed the directions exactly and was really excited as I never made crepes before. The first two crepes didn't look so hot but after i got the spreading technique down they really started to look like restaurant style crepes! I was happy that I learned to make this kind of fancy dish and it was remarkably easy. Then I tasted one of the crepes...BLECH!! I'm sorry but don't you have to put sugar, vanilla or something? I actually added in a little vanilla and cinnamon at the beginning, even though the recipe did call for it, it still tasted so bland. I added more vanilla, more cinnamon and some almond extract and sugar, okay it was getting better but still didn't taste like the crepes I get in the restaurants. I ended up throwing what was left of the crepe batter into what was left of the pancake batter I had stored which already had cinnamon, almond extract and vanilla extract. Now we're talking! They tasted great and my son loved them with some apple pie filling and whipped cream, but as the original recipe stood, I don't get how it got so many high reviews. The taste was flavorless without even a bit of sweetness in it.

Barbie's Tuna Salad

I was a little let down. I mean it taste good, but it doesn't really taste much different then my usual tuna salad which only consist of tuna, sweet relish, mayo and maybe a little salt and pepper. I couldn't really taste to much of the other ingredients, maybe just a little of the parsley, but everything else just kind of got lost. Would I make this again? Maybe, for company, just to seem fancy :) But for myself and my kid I think the usual sweet relish, mayo, tuna recipe will work just fine and is all the more easier.

Ground Beef Enchiladas

I would have given this 5 stars but there were so many alterations. I took others advice and used sour cream instead of yogurt. Also I used half Mozzarella cheese and half Gouda cheese. I'm a huge fan of Gouda cheese and I needed some more cheese for this recipe anyway. I used chili peppers instead of chili's. I bought the chilly peppers by accident not really knowing there was a difference between that and regular chili's. I also added a little ketchup to the meat/taco seasoning mix and used regular onion. Everything came out fabulous! I served it to my 8 year old son and he absolutely raved about how good it was. He wants me to tell the whole family the recipe and wants me to teach it to his kids when he gets older and has some. LOL. I have to say that was the best review I'd ever heard. My son pretty much wants this enchilada encoded into his DNA he loves it so much. I will definitely make this again. If you want to follow my version just make sure to only use half Gouda. Too much Gouda might make this too salty.

Chicken Chimichangas with Sour Cream Sauce

Delicious! I had never had chimichangas before, but I've heard about them. When I saw this recipe I thought i'd be a fun meal to try. The chimichangas were awesome! Nice and crispy, great seasoning and kinda fun to make! The verdict is still out on the sour cream sauce though. Mines was way too salty and even if it wasn't so salty, im not sure it added anything to the meal, but it wasn't bad. I ate this with beans and rice and avocado. I will definitely make this again, though next time I may not make the sauce.

Rice & Beans (Haitian Style)

Not bad. Definitely edible and has a good flavor. I think I need a little more flavor in my Haitian rice though. I may double some of the spices that were added. I grew up in a Haitian family and have had Di Riz Cole (what Red Beans and Rice is called in Creole) at so many different relatives houses and at so many different Haitian restaurants im very picky. But this recipe was good, especially for starters who just want to try it out. It needs a little more kick for me but it's definitely not bad.

Country Apple Dumplings

It was a little too sweet for my taste, but my harshest critic (my son) loved it! And no he doesn't go for anything sweet...in fact, he's not a big fan cookies/cakes. But he loved these and hailed me the best cook in the world for making them!

Debdoozie's Blue Ribbon Chili

I'm not a big chili eater, but I was bored and wanted to try something other then poultry and steak recipes. I followed the recipe pretty closely and found that it was a little bitter when I tasted it. I added the other half of that 1/2 of tomato sauce, a little adobo seasoning and a little honey. After I did all of that my chili came out tasting EXACTLY like the chili they give you at Wendy's (mind you, that's the only chili i ever eat). I was really delighted by that. Made some cornbread muffins and white rice. Tomorrow, with the left overs, I think I'll make a taco salad. Great recipe! Easy too!

Honey Ginger Chicken Stir-Fry

This was FANTASTIC and so easy to make! I followed the recipe exactly, but next time (there will be a next time) I will boil the sauce separately because it took a long time to thicken when I added it to the chicken and spinach which might have resulted in over cooked chicken and spinach. Also I will season an marinate the over night. But as far as the actual recipe goes, i wouldn't change a thing.

Caramelized Baked Chicken

I tried this with a few alterations and it came out delicious! I was mixing the ingredients when I realized I didn't have any honey. Having to improvised, I used some pancake syrup. I also used lower sodium soy sauce, and I didn't have enough of that either so I added some apple/cranberry juice. I used quarter chicken instead of chicken wings. The coating was wonderful, tasted almost like I bar-b-qued it on a grill rather then baked it in my oven. I wouldn't advise anyone to use the apple/cranberry juice as it dulled the taste of the soy sauce a little (maybe pure cranberry juice would have been better), but other then that it was very good!Even with all the alterations.

Apple Squares

I made this yesterday and it came out delicious! I didn't follow the mixing directions though, I was in a rush so I through everything in a blender ^_^. I didn't have any vanilla flavor left so I added just a little bit of almond milk. The batter came out creamy, the apples and walnuts were totally pulverized. Still tasted great! It reminds me of like a corn bread except appley and sweeter! I would make this again. I might try it the directions way so I can crunch on the walnuts and taste the whole apple...or I might make it my way again. Worked great for me!

Tomato Chicken Parmesan

Delicious and so simple to make. If you've ever made chicken parmesan then this is basically the same thing, with a few simple extra details. The chicken came out juicy and flavorful (I did marinate the chicken breast before hand though, to make sure it had lots of flavor). Couldn't ask for anything better. Quick, easy, good!

Sweet and Sour Chicken I

I have made this recipe several times before and even rated it giving it 4 stars. After a few alterations I've discovered I now have to turn that 4 into an ecstatic 5!!! With a few alterations this is now the most delicious sweet and sour chicken EVER! So here are the changes I made. 1. Please do yourself a favor and brine the chicken before coating and frying. I used the simple chicken brine recipe found on this site. Brineing is a much better then marinating for this recipe. When you keep the chicken in a brine for at least 2 hours prior to preparing the chicken stays soft and moist even if you over fry it a little! I will never make this recipe again without brining my chicken! 2. Fry the chicken piece in used corn/vegetable oil. I used some oil I had used to make fried pork, bacon, and chimichangas this past week. The chicken piece came out so excellent!!! They were the yummiest chicken nuggets ever. My son raved about how they tasted better then McDonald's McNuggets! 3. This whole business of thickening my sauce seems like a simple affair but I have failed many times at this. I bring the sauce to a simmer, take it off the fire and then add cornstarch a few moments later. I stir and stir but the sauce does not thicken. I learned that it doesn't thicken because it's not hot enough. It's okay to put it back on the fire till it starts to simmer and thicken. As soon as the sauce thickens take it off the fire! That's the main changes I made! Made for a fantastic dinner!

Broiled Tilapia Parmesan

Very good! My partner made this for me and my family. Only change was he added grated Parmesan instead of shredded Parmesan. LOL. So our fish had a bit of a grainy taste to it but it was still very good! Thanks for the recipe!

Chicken Broccoli Ca - Unieng's Style

Delicious! This recipe was perfect, it tasted BETTER then the chicken and broccoli I get from the restaurants and it was much healthier. The only change I made is I used low sodium soy sauce instead of the regular sodium kind. Still tasted great, still had a taste of salt and flavor so I didn't loose a thing. Thanks so much for this recipe!
