Filet Mignon with Rich Balsamic Glaze

First time ever making Filet Mignon at home...it was a total success, and it was the Hubby's birthday so it needed to be perfect! He loved it, so glad I found this recipe, definitely a keeper!

Apple Crisp

I cooked this for my husband. When he got home I put it back in the oven on low heat to warm it up...asked him to take it out 20 minutes later, which he forgot and it sat in the oven for about 40 minutes. I was terrified that it would be ruined, but to my delight, it turned out absolutely delicious even overcooked. I made a couple small variations in the recipe...no pecans just walnuts, added about 1/2 cup of craisins and served with vanilla ice cream. DELISH!

Simple Swiss Chard

Grain and Nut Whole Wheat Pancakes

Used hazelnuts instead of walnuts, added cinnamon and vanilla, no problems with thickness...totally amazing...my husband would not stop talking about how good they were!

Tandoori Chicken II

This may have turned out better if I had baked it or cooked it on a real grill. I used the Foreman grill and it got a bit dried out. It still had the indian flavors that we were going for. So all in all not too bad!

Sausage Stuffed Jalapenos

I used fat free cream cheese...turkey italian sausage. The jalapeno coring process was time consuming. I personally didn't love them, however, my husband thought they were excellent game day food!

Satay Sauce

The satay sauce turned out excellent, I did have to do a few variations: I added more peanut butter, and brown sugar and soy sauce. It was a tad bit bland when I prepared as directed, so I just increased the amounts. It was delicious and went perfect with our chicken satay.

I baked the chicken, followed the advice of others and reduced the soy sauce & curry while adding more peanut butter. It turned out wonderful, my husband kept going on and on about it.

Great recipe! We altered it a little and replaced the mayo with a fat free ranch dressing and bbq sauce mixture. We also added turkey bacon. Tasty!

Couscous with Chickpeas and Carrots

I loved this recipe....I added a tomato and extra garlic, didn't use any oil to skimp on the fat. It turned out delicious, although my husband didn't really love the chickpeas. :)

Baked Ziti III

I took the advice of other reviewers: mixed sour cream (low-fat) into ziti before layering, and added spices & garlic to ground beef (extra lean) while browning. This turned out amazing. While my husband and I both wondered if it would spill over the sides, it didn't and we will be enjoying this for days to come! Absolutely delicious!

The husband still daydreams about this recipe after I made it the first time. I reduced the butter as others had suggested (to cut on fat) however; my husband would have preferred more. :) Either way a keeper!

Vodka Soup with Mushrooms

My husband and I tried out this recipe right after getting it. To make healthier, I used low sodium broth, non-fat 1/2 & 1/2 and a jar of Bertolli vodka sauce (we don't have a great selection in my area). Added more mushrooms than the recipe called for. Absolutely fabulous. This is great served with a pinch of parmesan cheese on top and either a grainy whole wheat bread or mini grilled cheese sandwiches. Delish!
