Ranch Dressing II
A wonderful recipe for ranch dressing... I used homemade buttermilk substitute (1 C milk + 1 T white vinegar to make 'buttermilk') in place of the sour cream. I added 1/2 C of it, but I think I'd add 1/4 C next time because I like my dressing a little thicker. For the spices, I customized it and added a bit more black pepper and garlic. It turned out wonderful!

Fresh Tomato Salsa
Beware of using 5 serrano peppers... I read the other reviews before making this for the first time (thankfully) and only used one, and it turned out really well. The taste is very fresh and the flavors blend together. However, for the second time making it, I decided to use 2 serrano peppers instead of 1. Upon tasting it, I regretted it because it was too spicy... the pepper overpowered the other flavors and it made my stomach hurt because of the acidity. So I can't even imagine what 5 would be like! Otherwise, a very good salsa.

Creamy Chicken and Wild Rice Soup
I have never made a soup before and wanted to make chicken and wild rice for two large gatherings I had on the same weekend. So based on all of the wonderful reviews, I decided to use this recipe and definately was not disappointed. I followed the suggestions of other reviewers such as adding carrots, celery and onion as well as cutting down the amount of flour and butter and I used half and half and 1% milk instead of cream. In addition, I also did the unthinkable and made 40 servings-worth instead of the 8 the recipe is made for. While that added extra time to preparation and cooking, I am thrilled to say the soup turned out simply amazing and that everyone who had it loved it and wanted the leftovers and recipe (even those who self-admittedly don't like soup that much). Thanks for posting this recipe, it's delicious!
