No Fuss Chicken

I only used about 1/2c. of mayo and that was plenty. I liked it but my husband thought the mayo made it a bit too rich although he still enjoyed it. My husband thought adding mushrooms would be nice so I will do that next time I make it. Overall, it was quick and easy and inexpensive to make so it's a keeper.

London Broil Sandwiches with Yogurt-Cucumber Sauce

I ran short of time so I only marinated my beef for about 45 mins. Also, I forgot to buy a lemon so I used water instead and it worked just fine. My husband doesn't like dill so I left that out and I don't think it detracted from the taste. I liked the coolness that the yogurt and cucumber added to the beef but my husband wasn't too fond of it. I would probably make this again since my husband loved how the meat tasted.

Easy Peach Crisp II

I had to add an extra can of peaches (thank goodness I had some on hand) because the one can hardly covered the bottom of the dish. Other than that it was pretty good. My husband took it to work and the guys loved it. I might make this again but maybe experiment a little with it. It's a quick dessert when you're in a pinch for something.

Easy Chicken Balls

I left out the ricotta (forgot to buy) and the cloves. I did notice that the 2 eggs seemed to make the mixture very "wet" so I added some bread crumbs to make it easier to handle. I also didn't have crackers on hand so I crushed some corn flakes. I'm not a fan of hot oil but it was easy to make and my husband and I both loved them. I made a honey mustard dipping sauce for them as well. I would probably make this again but might try baking them instead of frying.

Best Ever Chicken Casserole

This was quick and easy and I usually make it with leftover chicken for even faster preparation. I made this 1st time with the full amount of mayo but we found it too rich so I reduced the amount by 1/2c. and it was better in my opinion. I also added more corn flakes to it since I love the crunch. Will make again.

Stuffed Chicken Breasts with Gouda and Spinach

I did like the other reviewer suggested because I don't like skin either. I pounded my breasts flat and then added the mixture and then rolled them up. My husband doesn't like gouda cheese so I used mozzerella and parmesan with the spinach. To cut calories I sprayed one of those spray butters on top of the chicken to give it a nice roasted appearance. I added a dash of paprika and parsley for color. It was really nice and would be nice for a casual dinner party as well.

Creamy Potato and Leek Soup

I had really big potatoes so I just used 4. I also added 1 more can of chicken broth. After we had eaten some of the soup my husband said it was too rich (I had used the heavy cream) so I ended up adding a 3rd can of broth (I then mashed up some extra potatoes to thicken it back up). It really was good but the heavy cream made it quite rich for us so I think next time I will make it with half and half or milk. I garnished with some parsely and served it with rolls. This is great for cold days :). Will make again and might add some minced ham to it as well.

Baked Seafood Au Gratin

This is definitely not an everyday dish but it would be really good for company or a special occassion. It took me a little longer to make than was suggested but I had to peel and devein the shrimp I also cut up all my fish and scallops. I added a little extra cheese to the top (cheddar) and added some finely crushed bread crumbs. I also served it over rice. My husband said he'd like mushrooms added so I'll do that next time I make it. It is very good but it is rich.

Chicken or Turkey Tetrazzini Deluxe

Like someone suggested, I only used 1 can of water but really shouldn't have used any at all. The soup, sherry and broth really would have been enough liquid. I used red bell pepper instead of green to give it a sweeter taste (grn peppers seem to be bitter sometimes). I left out the cheddar and only sprinkled a little parmesan on top but I also added some fine bead crumbs and a sprinkle of parsley to give it color. My husband loved it and asked to take some to his friend at work. I liked it but would have preferred less liquid. Will make again though.

Hash Brown Casserole II

I added ham to make it a more complete meal. We liked it but my husband thought it was too rich. If I make it again I might use the less fat and sodium soup and such.

Beef Burgundy Casserole

I don't know if I did something wrong or what but my meat came out very dry and I didn't even cook it for th full time. I think I'd probably get better results by doing this in the slowcooker.

Mushroom Stuffing

I think I must have done something wrong. My stuffing came out very dry. Even before putting it in the oven I had to add extra broth to get it to a moist state. The taste was good but it was dry. I would probably make this again just to see if it came out any different.

Honey White Bread

The first time I made this I didn't have the vitamin C or the ginger so I added a tiny bit of ground cloves. It smelled really nice and had a good flavor. The 2nd time I made it, I left out the cloves and just added a bit more honey. I liked it better without the cloves. It made a small loaf for my bread machine so I would need to adapt it to make about a 2lb loaf.

Simply Elegant Steak and Rice

This was really good. I didn't let mine simmer for an hour though or all the sauce would have dried up. About 30 mins was plenty for it. I served it with rice. Hubby loved it so it's a keeper.

Jamie's Cranberry Spinach Salad

Before I made this, my husband turned his nose up at the thought of having a spinach salad but once I made it, he went back for more. He absolutely loved it, I liked it. My husband thought it was sweet enough but I thought it was too sweet. I added a little more vinegar to my serving to cut the sweet. I'm serving it to guests this weekend and thought I might add manderine oranges and strawberries to it as well. I would make again but probably only for special occassions.
