End of the Line Ham Casserole

My husband gives it 5 stars, I give it 3 so I compromised on 4. I sliced my onion and potatoes very thin and it still took forever to cook. My hubby said it was even better as leftovers. I would make again though just for him.

D's Famous Salsa

My husband couldn't get enough of this. He ate the whole recipe by himself. I had really strong white onions and I think a red onion might be a bit milder next time. He's said it's better than store bought and it tastes similar to the salsa from a mexican food place here.

Caramelized Baked Chicken

Even with all the great reviews, I still wasn't sure if we would like this. I used chicken drumsticks and they turned out nicely. Next time I plan to try it with chicken breats and use it in a stir fry.

Bread Machine Garlic Bread

I've made a lot of bread in my bread machine but this loaf turned out pretty disappointing. I increased the garlic some others suggested and you could still barely taste it. Also, my loaf came out hard and small so maybe my yeast was off or I did something wrong, I'm not sure. Will make again just to see if I can get it right.

Chicken Marsala

This was good though not exactly the chicken marsala that I remembered from childhood. My husband really liked it though so I will make it again. I think next time some diced, cooked tomatoes and a little parmesan cheese would be a nice addition.

Little Meat Loaves

This was a little more involved than my usual meatloaf but it was worth it. I actually used mini loaf pans instead of free forming the loaves. I was able to get 4 nice sized mini loaves out of the mixture. I thought the sauce would be weird and my husband wouldn't like it but we both really did like it. The sausage I bought said mild but it was spicy so the sweetness of the sauce help cut the spice some. Will make again.

Jamie's Cranberry Spinach Salad

Before I made this, my husband turned his nose up at the thought of having a spinach salad but once I made it, he went back for more. He absolutely loved it, I liked it. My husband thought it was sweet enough but I thought it was too sweet. I added a little more vinegar to my serving to cut the sweet. I'm serving it to guests this weekend and thought I might add manderine oranges and strawberries to it as well. I would make again but probably only for special occassions.

Simply Elegant Steak and Rice

This was really good. I didn't let mine simmer for an hour though or all the sauce would have dried up. About 30 mins was plenty for it. I served it with rice. Hubby loved it so it's a keeper.

Honey White Bread

The first time I made this I didn't have the vitamin C or the ginger so I added a tiny bit of ground cloves. It smelled really nice and had a good flavor. The 2nd time I made it, I left out the cloves and just added a bit more honey. I liked it better without the cloves. It made a small loaf for my bread machine so I would need to adapt it to make about a 2lb loaf.

Mushroom Stuffing

I think I must have done something wrong. My stuffing came out very dry. Even before putting it in the oven I had to add extra broth to get it to a moist state. The taste was good but it was dry. I would probably make this again just to see if it came out any different.

I don't know if I did something wrong or what but my meat came out very dry and I didn't even cook it for th full time. I think I'd probably get better results by doing this in the slowcooker.

Chicken or Turkey Tetrazzini Deluxe

Like someone suggested, I only used 1 can of water but really shouldn't have used any at all. The soup, sherry and broth really would have been enough liquid. I used red bell pepper instead of green to give it a sweeter taste (grn peppers seem to be bitter sometimes). I left out the cheddar and only sprinkled a little parmesan on top but I also added some fine bead crumbs and a sprinkle of parsley to give it color. My husband loved it and asked to take some to his friend at work. I liked it but would have preferred less liquid. Will make again though.

Baked Seafood Au Gratin

This is definitely not an everyday dish but it would be really good for company or a special occassion. It took me a little longer to make than was suggested but I had to peel and devein the shrimp I also cut up all my fish and scallops. I added a little extra cheese to the top (cheddar) and added some finely crushed bread crumbs. I also served it over rice. My husband said he'd like mushrooms added so I'll do that next time I make it. It is very good but it is rich.

Creamy Potato and Leek Soup

I had really big potatoes so I just used 4. I also added 1 more can of chicken broth. After we had eaten some of the soup my husband said it was too rich (I had used the heavy cream) so I ended up adding a 3rd can of broth (I then mashed up some extra potatoes to thicken it back up). It really was good but the heavy cream made it quite rich for us so I think next time I will make it with half and half or milk. I garnished with some parsely and served it with rolls. This is great for cold days :). Will make again and might add some minced ham to it as well.

Stuffed Chicken Breasts with Gouda and Spinach

I did like the other reviewer suggested because I don't like skin either. I pounded my breasts flat and then added the mixture and then rolled them up. My husband doesn't like gouda cheese so I used mozzerella and parmesan with the spinach. To cut calories I sprayed one of those spray butters on top of the chicken to give it a nice roasted appearance. I added a dash of paprika and parsley for color. It was really nice and would be nice for a casual dinner party as well.
