Oatmeal Raisin Cookies I

I think this is a pretty good recipe. For those in the UK who use gas, I baked mine at gas mark 5 for anywhere between 7-10 minutes. My first batch was a bit pale looking and fell apart when I tried to remove them. The next batch I baked almost 10 mins (peeking at them at 5 mins) and they were much better. I let mine get to a golden brown, instead of just brown around the edges. I'm not much of a baker and this was easy and pretty much hassle free.

Slow Cooker Baked Beans

I'm not sure what happened with this recipe but I could never get my beans to soften. I took into account everything that was suggested here and thought I'd have no problems. I soaked them overnight, I boiled them like mentioned here and I slow cooked them for ages. My beans would never really soften. I even took them from the slow cooker and then cooked them on the stove to try and get them softer before adding them back to the slow cooker. It was a real shame because I made this for my English in laws who had never had American style baked beans before. Not sure I will try this again.

Favorite Old Fashioned Gingerbread

I tried to find molasses here in the UK but couldn't. I used dark treacle and it worked for the most part. I thought the treacle had a stronger taste than the molasses would have so I think next time, I would reduce the amount of treacle and perhaps add a bit more sugar. However, the strong taste was offset by eating the cake with vanilla ice cream.

Microwave Oven Peanut Brittle

This was so easy to make and it tasted wonderful. I couldn't find corn syrup here in the UK (though I'm sure there is something similar) but was able to buy some from Ebay. The first batch was made according to the directions. The second batch was changed up a bit. I put 1 cup of peanuts and 1/2 cup of rough chopped pecans. I also added just shy of 1/4 tsp almond extract and just shy of 1 tsp vanilla extract. My husband loved it and I'm sure there will be any left to share with friends :)!
