Black Magic Cake

Reviewed: Mar. 19, 2010
Excellent recipe! We have made it three times already, (twice in one week) and it never lasts longer than three days! I baked it in three 8 inch round pans to make a cake with more layers. It turned out great! I also used 1/2 c. butter, 1 c. 10X sugar, 3 1/2 c. cocoa powder, 1/2 c. milk, and 1 teas vanilla for icing. Next time I'll try mixing some instant coffee granules into the icing before spreading. I usually sprinkle mini-chocolate chips on top for extra chocolaty-ness! It's excellent!

Extreme Chocolate Cake

Reviewed: Feb. 16, 2010
Excellent cake! Loved the icing and the cake came out super moist and rich! I substituted buttermilk for milk and strong brewed coffee instead of water. Also I baked it in three 8" rounds and didn't slice them. They turned out perfect and made a nice high cake! Next time I might try a mocha icing to help counter some of the chocolatey-sweetness. :-)

Emily's Famous Chocolate Shortbread Cookies

Reviewed: Feb. 16, 2010
This turned out great! I followed the recipe exactly for the cookies except for refrigerating the dough and rolling them as thin as possible before cutting them. I added more mint to the filling and they were a hit. A surprisingly mild chocolatey-mint flavor. Thanks for sharing!

White Chocolate Snack Mix

Reviewed: Dec. 19, 2009
This recipe is wonderful!! It is now an established favorite holiday snack among the family and will be repeated every year. We didn't make any changes although the recipe does lend itself creativity! Thanks for the lovely recipe!

Hamburger Vegetable Soup

Reviewed: Sep. 2, 2009
This was excellent! I doubled the macaroni, veggies, tomato sauce and then added a little bit of instant mashed potatoes and it turned out great! A little more like stew than soup how the family prefers. Thanks for the recipe!

Best Chocolate Chip Cookies

Reviewed: Aug. 7, 2009
I followed the recipe exactly except I used a tablespoon of vanilla instead of a teaspoon. They turned out wonderfully! (I also had to bake them a 12 minutes instead of ten, but it was easy to see when they were done. :-) Thanks for the great recipe!

Conchas (Mexican Sweet Bread)

Reviewed: Aug. 5, 2009
These were good. Not quite what I was expecting but good. They're like a light, fluffy bread with a sweet topping. I found that topping does get stale quickly so they don't keep for too long. The men of the family ate them up very quickly, but most of us girls didn't care for them.

Chicken Stir-Fry

Reviewed: Apr. 29, 2009
This was a great base recipe! I used extra corn starch and then threw in lots of frozen vegetables, (green beans, squash, broccoli, etc.) until it looked right. I did add some minced garlic and lots more garlic powder. And I used chicken broth instead of the water and bullion. Thank you so much!

Coffee Chocolate Chip Cookies

Reviewed: Mar. 21, 2009
These were really great! I used apples sauce instead of the butter and shredded coconut instead of almonds. I also added 1 teas coconut extract and only 1 cup sugar. They were great but I'd recommend flattening them some as before they bake and I'll leave out some of the chocolate chips next time since there were quite a lot! :-) Thanks for the recipe! (Oh, and the coffee flavor was great too! I used 1/2 cup instant coffee and dissolved it in coffee instead of water.)

Chicken Noodle Casserole I

Reviewed: Mar. 18, 2009
This recipe was a big hit and definitely one that I'll make again. I made the following changes to make it a little healthier: I used yogurt instead of sour cream and also mixed in some cheddar cheese with the rest. I also put in a bag of cooked broccoli, and topped it all off with more cheese and bread crumbs. (I omitted the butter.)

Biscotti Toscani

Reviewed: Mar. 12, 2009
These turned out perfectly and none broke!! I used the Grand Mariner orange liquor instead of the orange zest and the flavor was great! Next time I'll have to double it!

Banana Wheat Bread

Reviewed: Feb. 28, 2009
This is my absolute new favorite banana bread recipe! I grew up eating banana bread and this is the best ever! I used apple sauce instead of the oil, added extra vanilla and a teas of butter extract, and left out one of the egg yokes. I also laid a few pecans on the top of the loaf for more pecan flavoring. Lastly I added 1/2 cup chocolate chips and it turned out great! Slices beautifully and great for toasting and having plain or with coffee. :-)

Awesome and Easy Creamy Corn Casserole

Reviewed: Feb. 26, 2009
This recipe was great and I was pleased to find a lighter version of our old recipe. I didn't have the Jiffy mix so I substituted other ingredients to make my own, I used frozen corn so it had to cook a little over an hour. Also I used 1/2 cup sour cream and 1/2 cup non-fat plain yogurt. Then I used 1/4 cup butter and 1/4 cup apple sauce to further cut down the fat. Despite all my changes, it turned out GREAT!! Next time I might go all yogurt and all apple sauce.

Easy Whole Wheat Peanut Butter Cookies

Reviewed: Feb. 4, 2009
These are delicious little cookies! And soooo fast and easy to make! I substituted apples sauce for the butter and I didn't have any honey so I used 1/2 cup sucanut, (all natural sugar). I also added a teaspoon of vanilla and they turned out beautifully! I'll probably triple it next time as they won't last long! :-)

Burrito Pie

Reviewed: Feb. 4, 2009
This was a great meal! Very filling and the entire family loved it! We have a few picky eaters so I left out the olives, green chili's and just used a huge can of regular diced tomatoes. I used a taco seasoning packet instead of the sauce and ended up having to blend a big can of beans in the blender to make the refried beans as I didn't have any on hand. I also used whole wheat taco shells and it's the first time I haven't heard the kids complain about eating them! You couldn't taste the difference. Thanks for the great recipe . . . oh, I also almost doubled the cheese. It was great!

Cream Cheese Pound Cake I

Reviewed: Jan. 29, 2009
This pound cake was really great! I made it for strawberry shortbread and it beautifully dense and moist. Next time I'll make it just to have by itself! I also only used 2 1/2 cups sugar and that was plenty. I also substituted 1/2 cup of applesauce for 1/2 cup of the butter to make it a little less fattening. :-) Turned out great! Thanks for the recipe!

Whole-Wheat Chocolate Chip Cookies

Reviewed: Jan. 24, 2009
This recipe worked great! The cookies came out beautifully! I made a few adjustments to help it become a healthier snack: I used apple sauce instead of the margarine. Also I used 1/4 cup sucanut instead of the white sugar and substituted pecans for the walnuts. I also added more vanilla and butter and coconut extract to help cover the wheat and sucanut flavor. The result was delicious and even with using dark chocolate chips, (60%) I will probably cup back more of the sugar next time. They're plenty sweet enough for my family and my tastes. Thanks for the great recipe!

This was very good! I don't think that I added enough cheese so I'll add more next time, but the family loved it!
