White Chili I

I did this as a slow cooker meal, since it was a busy day! I barely made any changes to the recipe...instead of dried cilantro, I used frozen, fresh cubes of it. I also used just a bit more of what was required to suit my tastes. Since I love spicy (the hotter the better!), i added some hot sauce to my bowls. My husband and I enjoyed this chili, and it was GONE by the end of the evening! Fully enjoyed it, and will make it again!

Incredibly Cheesy Turkey Meatloaf

This recipe is so good that I have passed it on to friends - and I even have a copy in my box of paper recipes! I made this with sharp cheddar cheese and it was fantastic! An absolute go-to meal.

Sesame Noodles

This recipe is fantastic! The only change I made was that I used a spicy sesame-chili oil with some chili powder, rather than chili paste, that added good flavor and I didn't have to buy the extra ingredient. I made the recipe so that we had enough for leftovers - the noodles kept for a while, and when I used the leftovers, I added tofu and vegetables. Definitely a keeper, and will make again!

Mushroom Risotto

Delicious recipe! We ate this by itself for dinner one night; very good for when it is cold and snowy outside! We used cream instead of whole milk altogether, and it turned out wonderful. Added a little too much stock so it took quite a long time to cook. Will definitely make again - this again is a great winter evening meal, as well as a great side dish for company.

Bow Ties with Sausage, Tomatoes and Cream

This was delicious! I made a few changes in the recipe however - instead of using crumbled sausage, I used fresh sausage that I sliced. I also added some sliced red peppers when I added the onions. It turned out great! Will definitely make this again :)

Spicy Black Bean Soup

This soup was delicious. Since it's just me & my husband, the batch was a multi-night meal. I omitted the regular salt when cooking it, and when reheating, I added a few more of the spices to freshen it up. It tasted just as good reheated as it did the day it was made! Thanks for the recipe!!! :)

Spinach and Leek White Bean Soup

I'm not quite sure how my husband will like it, as he is getting home late tonight, but I LOVED THIS! I read several reviews and added frozen instead of fresh spinach, crushed tomatoes, diced tomatoes, a jalapeno pepper (seeds removed), replaced the chicken broth with vegetable, and doubled that. Also doubled the cumin & added salt & pepper to taste. The basics for this recipe are just fantastic - I usually read the reviews to see what other healthy things I can find to add to it successfully. The couscous was a great touch - I think I added a bit too much, but the extra broth made up for it. I am SO excited to take this for lunch - and if Hubs doesn't like it, more for me :)

Orzo with Tomato and Fried Tofu

My husband and I are trying to add tofu to our regular diets, and this dish was a perfect way to incorporate it. I read several of the reviews and took their suggestions, adding sun-dried tomatoes (instead of raw ones), black olives, fresh basil (instead of dried), and added a few mushrooms as well. I will definitely make this again!! :)

Easy Tortellini Soup

Turkey and Hash Brown Casserole

Company Cauliflower

It was good, but it wasn't too exciting. I cut everything in half since we didn't need 8 servings. We're saving the leftovers to eat later in the week, but I'm not sure I'll make it again, as I wasn't that impressed.
