Fast and Delicious Black Bean Soup

I only gave this 4 stars as I did not use all the ingredients listed. I didnt have a pepper on hand so I added some chili powder and red pepper flakes to add heat. I also doubled the cumin and Did not use ham. I added the juice of 1/2 a lemon and extra garlic as we like things garlicky. The recipe is a good base to add your own twist. I did not puree the beans first, i cooked all the ingredients till the flavors came together and used an imersion blender to get the texture I was after. Delicious, even my husband who normally is not a fan of spice in dishes thought this was tasty. I served with a dollop of sour cream and cornbread on the side for a quick and hearty weeknight meal :)

Artichoke Chicken

I've made this recipe a half dozen times already since January and each time it has gotten better and better with little tweaks. I use a can of marinated artichoke hearts, chopped fine, 1/2 a red onion diced,2 pressed cloves of garlic, salt and pepper and sour cream and mayo. I found that 2 parts sour cream to one part mayo ratio makes it creamy and not oily but still adds that rich flavor. Ive used both chicken tenders as well as breasts and prefer the tenders. I coat the chicken in the mixture and set in the pan, then spread the rest of the mixture over the chicken. I've also sprinkled the parm or mozz cheese is I was out of parm over the top about 5 minutes before it was done. It has come out great everytime!!

Poor Man's Pepper Steak

I revised this a bit by using beef broth instead of water and also adding a bit of gorgonzola cheese right before serving as a garnish. I thought it was pretty good but still a little tough as far as cube steaks go, the only way I'd ever made cube steaks before was using them for chicken fried steak and they always turn out good like that but I was looking for other ways to use them since they are so budget friendly. MY husband however did not like them at all..said it was really grizzly and thought that they could have used another hour or so in the oven...I will probably not make again with cube steaks but the recipe itself if used with a chuck steak will be on my list to try :)

Pillow-Soft Dinner Rolls

I halved this recipe and it still ended up making 16 rolls so it does make a lot, unless you are making HUGE rolls. Very easy. I let rise for twice as long as recipe stated as the first time I checked, they hadn't risen much. Will make again for sure.

Cinnamon Rolls II

This was good ..not as cinnamon-y as I would like and a little too sweet so probably next time I will reduce the amt of brown sugar and increase the cinnamon..the dough was perfect, although I did tweak a few things based on the reviews here. I combined the dough, kneaded for 30 minutes and then let rise for 3 hours. I then punched down the dough, and rolled out into the rectangles. I cut my rolls using a serrated bread knife and it worked great! I cut this recipe in half and cut the dough into 2 inch rolls and it made 18 rolls for me...plenty big enough to serve. My husband asked if we were having a party as there were so many for just the two of us. My 1 year old didn't like them, too sweet for him so next time I will use a lot less sugar.
