Savory Zucchini Chard Muffins

If you've stumbled upon this recipe then you must be *thinking* about making these. Do yourself a favor and just DO IT! I followed the recipe exactly, doubled it even, and they came out incredibly delicious. Their density is more quiche-like than muffin but super good nonetheless.

Pesto Surprise

This was great! Very light and fresh pasta salad. I gave it four stars since I didn't follow the recipe exactly. At the last minute I realized I didn't have an Italian dressing packet so I upped the pesto and added juice from one lemon instead.

Sarah's Tofu Noodle Soup

Holy mackerel this soup is fantastic. I used chicken broth since that's what I had but OMG it was delicious! I think the real key to this recipe is the butter at the very beginning. It wasn't THAT much butter especially compared to the amount of broth that's added but I think it really brought a much richer flavor to the soup. I didn't have celery (so I used celery salt), marjoram, or cornstarch but I didn't miss them a bit.

Bok Choy Beef Soup

This came out great! Super easy too. This recipe satisfied my pho craving even though it's not your traditional beef noodle soup. I added soba noodles and upped the chicken broth because I like noodly/brothy soups. The lime is key (pardon the pun) - in addition to what the recipe called for, I served wedges with the soup so everyone could add more if they wanted. I did not include the chili-garlic sauce or the jalapeno to the pot since it would be too spicy for my 3 year old but adding it to my bowl separately after serving was still yummy! Will for sure make again!

Shrimp Scampi Bake

Followed the recipe exactly EXCEPT that I halved it for our family of three. Came out perfect after 12 minutes in the oven. We ate it all -- we being me and my husband. The two year old ate the pasta/w scampi sauce, not the shrimp. No surprise there.
