Creamy Rice Pudding

Reviewed: Feb. 2, 2012
I've never been a big fan of rice pudding. This recipe is awesome! I only added a little bit of cinnamon. The second time I tried almond milk and it still turned out fantastic.

Herb Rubbed Sirloin Tip Roast

Reviewed: Jun. 4, 2011
Let roast sit on counter for 40 min. The colder it is, the longer it takes to cook and it becomes dry and tough. I cooked a 2.75 pd roast for 1 hr. It was 150 internal. I removed it and let it rest 10 min. It was so juicy and tender. Used all the seasonings except the thyme. I reduced salt to 1 tsp and used fresh marjoram, sweet basil and oregano. The fresh herbs made a huge difference. Made a gravy with drippings, butter, small amount of salt, water, and red wine. Amazing. Would serve for company.

Easy and Elegant Pork Tenderloin

Reviewed: Feb. 8, 2011
Fantastic! Only took a few minutes to put together. Followed other reviews. Coated with olive oil and added garlic powder, onion powder, salt and pepper. I rolled in Progresso italian bread crumbs. Lined a shallow baking dish and sprayed with Pam for easy clean up. Covered lightly with aluminum foil. I baked 22 minutes and then turned and cooked another 22 minutes. Browned on both sides very nice. If I didn't turn it, the bottom would have gotten burned and the top would not have browned at all. Excellent flavor and very moist. I will make again.

Cabbage Roll Casserole

Reviewed: Jan. 16, 2010
I cooked the rice separate. I cooked onion and garlic in olive oil until tender. I added some parsley, celery salt and some cayenne pepper. I cooked it for the 1 1/2 hrs in the oven. Cabbage rolls are a labor of love. Tastes just as good with a lot less effort. Perfect. Will definitely make again.

Lemon Chicken III

Reviewed: Dec. 21, 2009
I marinated the chicken over night, I love lemon. This was so not good at all. I was able to use the cooked chicken in a spicy chicken soup, so it wasn't a total loss. I won't make this again.

Carrot Cake III

Reviewed: Nov. 1, 2009
5 star with changes. Used another reviewers tips: 1 cup brown sugar and 1 cup white sugar. 3 teaspoons of vanilla, 1 8oz. can of crushed pineapple drained, 1/4 teaspoon of nutmeg, 3 tsp of cinnamon, 3/4 cup canola oil and 1/2 cup applesauce. I also added walnuts instead of pecans, and I added 1 cup of shredded coconut. I shredded carrots small, and they did not sink at all. I reduced powdered sugar to 3 cups and it came out perfect.

French Baguettes

Fantastic! Made in a bread machine with bread machine yeast. I cut into 4 pieces for 7 1/2 inch meatball subs. I baked on parchment paper. I didn't add the egg white or water. It came out crusty on the outside and soft on the inside.

Kielbasa and Potato Bake

Reviewed: Sep. 23, 2009
Three stars on the original recipe. I agree, great idea, but lacked flavor. Five stars with changes. I made a simple roux by using equal parts of butter and flour.I mixed in some chicken broth and some milk. I added salt for flavor. I mixed in a handful of cheese. I sauteed onions with some garlic, then added sausage. I mixed the sausage in the roux. I layered the potatoes, spread the sauce, then layered again and finished with the sauce. With these changes, my family really loved it and I will make again.

Apple Crisp II

Reviewed: Sep. 23, 2009
I put it in an 8x8 pan instead.I used half for top and half for bottom crust. I cut up my apples and put them in a bowl with the sugar and some lemon juice. I let it sit for 10-15 minutes and the apples make their own juice. I did that instead of adding the water. I used Honey Crisp apples so I only used 1/2 cup of white sugar and a 1/4 cup brown. Definitely a repeat.
