Chicken Tortilla Soup V

Love this soup!!! I boiled the frozen chicken breast in the broth with all the spices and onion and garlic, removed the breast and shredded them and put it back in the broth. This gave the chicken a very good flavor! I added rinsed black beans, one small can of mild chopped jalapeno and upped the cumin and chili powder. Simple and delicious!

Chicken Gruyere with Sauteed Mushrooms

This is an absolutely delicious dish!!!! Only thing I did slightly different was to increase wine to 3/4 cup and dissolved a chicken bullion in about 1/3 cup of hot water and added it to the mushrooms and onions just because I wanted mine to have more sauce.

Monster Cookies II

These where very good cookies and fairly easy to make, but not my favorite. I found that I needed to bake them for 14 minutes or they were to gooy for my taste. At 14 minutes they were crispy on the outside and soft on the inside. I used butter instead of margarine, and also crunchy peanut butter.

Broccoli Cheese Soup

This is better then the broccoli cheese soup you get in most restaurants!! I made it for my daughters college soccer team's post game lunch and it was a huge hit! I used vegetable broth instead of chicken, and I did puree a little more then half of the broccoli in about half of the broth in a blender after is was cooked and added shredded carrots.

Chicken Chile Spaghetti

My husband is still eating as I write this...his 3rd or maybe 4th helping (I lost track!). It was awesome! The only change I made was that I boiled 4 boneless chicken breast (still frozen) till they were cooked through and used the broth from that plus a little extra to boil the pasta. I also used the Rotel "hot" version of the chopped tomatoes. Next time I am going to try Velveeta light so I can consume more with out worry about the calories so much! I will also use a little less pasta.

Bean Burrito Casserole

This is excellent for a quick, throw together recipe! It is great as written or it also lends itself to changing up for lots of variety. For those of you that are turned off by the cream of mushroom or chicken soup and sour cream mixture try adding a 1-2 tablespoons of cumin to the mix. You can also forget the sour cream and soup mixture completely, and just top with canned enchilada sauce for a quick "pan burrito" recipe. Hormel no bean chili mixed with the sour cream and canned chili peppers also works well. I have also made this with the other variety of burritos (beef and beans etc). Enjoy!!

Golden Chicken Casserole

This a great recipe that is quick and easy. I added green pepper and onion chunks, extra water chestnuts (because I love them!), 2 tablespoons of soy sauce and 2 table spoons of the drained pineapple juice to make it a little saucier. Adding the soy sauce really makes this dish great!!!
