Stuffed Pattypan Squash

This has become one of our regular dinners in the summer. We often tweak the recipe depending on what meat is available at our farmers market. I've substituted sausage, ground beef, bison, goat, and even mushrooms for the bacon. All have turned out yummy!

Quinoa with Mushrooms

Yummy! We loved this so much that I have started cooking chicken pieces along with the mushrooms and onions to mix in with the Quinoa, and using this as my main dish.

Slow Cooker Chicken and Dumplings

Made this when we had some guests in town doing a weekend of cold weather activities. It hit the spot for warming up when we got home. As others suggested I used Chicken stock instead of water. I also added some frozen peas. I was out of chicken breasts so used some leftover shredded rotisserie chicken Only change I would make is to add more veggies next time.

Japanese Salad Dressing

LOVE THIS! We have tried with little success to replicate the yummy ginger dressing at one of our favorite Japanese restaurants. This came pretty darn close and has become one of our regular salad dressings.

Doug's Easy Applesauce

This was simple and delicious. I made with a variety of apples from a local orchard. Some were softer varieties and others were harder varieties which made for a nice chunky sauce. I doubled the recipe, but really wish I would have had enough apples to triple or quadruple.

Balsamic Glazed Roasted Potato Salad

I always hate those review were people totally changed the recipe.... I'm sure would be good as written, but I didn't have any regular potatoes, green onions, bacon, or mushrooms. I made it with sweet potatoes, using the dressing recipe (only omitted the paprika), subbed green peppers for the mushrooms, and omitted the green onions and bacon. Turned out really well..... will try to make according to the recipe next time.

Delilah's Frosted Cut-Out Sugar Cookies

Tastes like the cookies we used to get for every holiday from a bakery back home! I didn't have butter flavored shortening on had, so I used same amount of regular shortening and added 2 Tablespoons melted butter and it worked just the same. Can't wait to make them again! ** Made them back in October for a get together. We're meeting again in January and I've already had 3 people request mto make these again.

Honey-Garlic Slow Cooker Chicken Thighs

The soy sauce was a little over-powering. I will make it again but adjust the sauce proportions. Had the left overs the next day shredded in flour tortillas with some other fixins which cut down the saltiness from the soy sauce.

Meatiest Vegetarian Chili From Your Slow Cooker

Despite being a house full of carnivores, this might just be the best chili we have ever made. Only change I made (out of necessity) was I added 4 different types of beans because I didn't have 4 cans of black beans on hand.

Tomato Soup

This was pretty yummy. I used coconut oil to saute the veggies (a staple in our house). Also as others mentioned I put the soup in the blender, since I have a Vitamix, I put it in on the "hot soup" option and didn't bother with the simmering as long. It made enough that I'll freeze a good bit of it. I would probably cut in half when making it again.

'Secret' Salad Dressing

This has quickly become one of our favorite salad dressings. Easy to make and quite tasty! Only change we made was to use Greek yogurt instead of mayo (a standard replacement in our house).

Mulligatawny Soup I

Love it. This has become a staple in our house and I've taken it to a couple "soup parties" where guests have raved about it. Only changes we've made is that I use quinoa instead of rice, and I usually make it the night after we've had a roasted chicken for dinner so I use those left overs instead of using just chicken breast. Also I typically quadruple the recipe- so that there are plenty left over to freeze and have the next week or so.
