Shrimp Francesca

Super delish!!!!!! AND Super easy!!!!! My family hammered this dish and my daughter & I are not big shrimp fans. I love seafood and shrimp are good but they are at the bottom of my seafood list. However...this dish it at the top!!! I tweaked the recipe a little. I used more shrimp then called for.. about 1 1/2 lbs but a little less breadcrumbs..about 1/4 cup and more Romano cheese...a bit less then 1/2 cup. I also used Marinated artichoke hearts (I love these and will eat them right out of the jar!) We served this with whole wheat thin spaghetti and salad. Next time I will add some asparagus to it! DELISH!!!! Thank you!! :)

Nana Dot's Irish Soda Bread

Yummm..Meeeee!!! I made this for St Patty's day and it was devored by my entire family!!! I left out the raisens and currents b/c my daughter would not have eaten it otherwise. However next time I will make a double batch and put the currants in half and nothing in the other! Super easy!! :)

Delish!!!!!!I used red potatoes and just left the skin on. I sauted red cabbage and green onions in some butter with some salt and pepper. Mixed some bacon in..more then 4 slices b/c bacon makes everything better!! Delish!!!!!! :)

Beignets

Delish!!!!! I made these with my kids for Fat Tuesday! Seriously yummy! We made the dough last night and the only thing I changed was I added a splash of vanilla. We refrigerated the dough over night and before school this morning they pressed it down to let it rise again. After I picked them up from school this afternoon we rolled our dough out and haven't quit eating them since!! This makes a ton so I bagged up some for family & friends and we are making special deliveries tonight! : )

World's Best Lasagna

I first made this lasagna during 1 of 3 blizzards we had last year. My family all lives very close by, within walking distance, so they came over for dinner & everyone LOVED this. I just made it again and my mom came over for dinner. She is VERY picky and RAVED about this lasagna. My hubby just ate 2 plate fulls and the kids scarfed theirs down. THANKS so MUCH for such a DELISH recipe! The only changes I made were to double the meats and I used fresh mild italian sauage. I also doubled the ricotta cheese and used Romano cheese in place of Parm. : )

David's Yellow Cake

Delish!!!! This is hands down one of the best cake recipes ever! I made a few changes. I didn't have cake flour so I took out 2T of flour & added 2T of cornstarch. I sifted all the dry ingrediants twice and made sure to cream the sugar & butter for at least 5 mins. I did 2t of vanilla and I did 4 eggs (so my cake wasn't really yellow!) which I added the yolks 1 at a time & then added the whites which had been lightly beaten. I have made both cupcakes & 1/4 sheet cake. Both recieved rave reviews by family & friends! This will be my go to cake recipe from now on! Thank you!!!

Triple Berry Crisp

LOVE LOVE LOVE this!!! I have made this several times in just the past month. I made it for 2 4th of July parties, my monthy girls night and again just for my hubby & kids. The crisp is perfect!! Everyone raves about this dish! It is so simple to make. I use a mixture of whatever berries I have on hand so blackberries, raspberries, blueberries & strawberries as well as peaches have gone into this dish. They all taste delish in any combo! I also used more berries then what the recipe called for. About an additional 1 1/2 to 2 cups. The only other change I made was to cut down on the white sugar. The berries alone produce enough sweet juice so you only need about half of the sugar.

Aimee's Quick Chicken

Great for a quick fix on a busy day! My entire fam loved this meal. I used Ken's Honey Teriyaki and used the real pieces of bacon. I also used Ramano cheese instead of Parm. I did use more then the suggested amount of Mustard & Sauce as well. These were delish!!! I will be making this dish again for sure!

Garlic Red Potatoes

The family loved this. I used baby red potatoes and cut in quarters. Cook time was about 45mins. I also used Romano cheese on top. Delish!

Zesty Slow Cooker Chicken Barbecue

I made this & it was a hit with the entire family! I used Sweet Baby Ray's BBQ sauce. The only adjustment I made was to add some Chipotle Pepper..maybe about a Tablespoon. I like a bit of smoke with my BBQ. I didn't use froze chicken breast either. Cooked on low for about 5 hours, shredded chicken and continued to cook on low for 2 additional hours. Delish!!

Slow-Cooker Chicken Tortilla Soup

This is a keeper if your looking for authentic taste. This was super easy to make and my entire family loved it! We go to Mexico twice a year and everyone in my family eats this several times while we are there. They only reason I gave it 4 starts was b/c I added a few toppings that it is served with in Mexico. I served this was toppings on the side---cubed Monteray Jack cheese, sliced avacoado and sour cream. I also added a splash of lime juice. Delicious!!!

Best Chocolate Chip Cookies

Awesome!!! I have been looking for a new & better recipe for choc. chip cookies and this is it. They come out just as it says. Crispy on the outside & chewy on the inside. My hubby & kids love them! The only things I changed---I omitted the nuts (I prefer my choc. chip cookies without nuts) and I added 1/2 tsp Cream of Tarter (it doesn't change the flavor it just gives the cookie a different appearance). This recipe is definitly a keeper!!
