Creamy Cajun Chicken Pasta

This recipe is awesome. I do add a little more garlic powder and parmesan/Romano cheese to accommodate my taste buds. My whole family loves it!

Jay's Jerk Chicken

This is a good jerk recipe but I agree with some other reviews that the consistency could be thicker so I may simmer and add some cornstarch the next time to thicken. I also substituted habernero peppers which definitely gave it a spicier kick than jalepenos.

Slow Cooker Chicken Stroganoff

My kids love this! It has become a keeper in my cookbook. I add a dash of garlic and onion powders and peas and serve with biscuits.

Bacon-Balsamic Deviled Eggs

These were pretty delicious however I altered the recipe, I omitted the onions and used onion powder instead - didn't have any bacon either. I added a dash of garlic powder, 1 tbls of relish, a couple drops of worcestire sauce and hot sauce, 2 tsp ground mustard, and a dash of salt. I put the filling in a sandwich bag and cut a tiny hole in the tip and squeezed to fill the egg halves which turns out much neater than spooning. I also garnished with paprika instead of parsley.

Broccoli Cheese Soup V

This is a great recipe. We don't care for onions so I substituted with onion powder and sauteed minced garlic with the butter instead. I also added cheddar cheese in addition to Velveeta. This was a great hit with kids I will have to double the recipe next time because there were no leftovers!

Roasted Lemon Herb Chicken

This is a delicious recipe, however I increased the seasonings by 1/2 which I'm glad I did. I also substituted boneless breasts, mixed all the ingredients together, pierced the breasts and placed in freezer bag to coat. Next time I will let this marinate for a few hours or overnight for more flavor. This was a definite hit, thanks for the recipe!

Indian Chicken Curry II

This was my first attempt at Indian Curry. I doubled all of the seasonings because it seemed too bland at first. The sauce came out thicker than expected despite increasing the liquid ingredients also, next time I think I'll add some water. To me this dish was missing something not sure what...it got an ok from my fiance which means I can make it again. I served over top of Basmati rice and sprinkled with cilantro before serving.

Cornbread Stuffing Southern Style

This is a great recipe that can be modified to your liking. I was hesistant about using yogurt but glad I did. I substituted a can of cream of mushroom for the corn,omitted the green peppers, and added 2 cups of dry stuffing mix. I seasoned my cornbread before baking in addition to the seasonings the recipe called for. I also re-baked the stuffing itself for about 35 mins after combining all the ingredients - which resulted in a very moist but firm stuffing. Everyone loved it including my 4 & 6 year old girls, I received lots of compliments. I look forward to making this side dish again.

Karyn's Cream of Crab Soup

Cream of Crab soup is my absolute favorite and finally...I no longer have to go to a restaurant to order a bowl, I can now make a nice big pot all for me! This recipe was very yummy. I did modify the seasonings to my liking but not too much. The first time I made this soup it was a little thinner than I preferred so the 2nd time I added another tblspn of flour, an additional pkg of hollandaise and blended with a hand mixer in the pot until very thick and creamy then continued to add the remaining half & half and whipping cream which resulted in a thicker consistency. I also added a tblspn of tarragon and 2 tsp dry mustard. This was a big hit with my fiance and he's not much of a soup guy so I'll definitely be making this again and again and again! African Chicken Stew

I too was very skeptical about using peanut butter, but this stew was very tasty. Based on other reviews, I also doubled all the seasonings and I'm glad I did, otherwise it definitely would have been bland. I used pinto beans instead of garbonzo and also added sting beans and carrots. This will defintely be added to my list of repeats!

Toscana Soup

This recipe is very tasty! I've actually tried it twice, once using sausage and spinach (instead of kale) the 2nd using diced chicken breast (instead of sausage) and kale. I preferred it better w/chicken. The kale definitely gave the second attempt more flavor and texture than the spinach. I prefer my kale tender so I added it in the beginning. I also substituted w/olive oil, don't care for onions so I used onion powder and extra garlic. I would prefer the cream base to be a little thicker but I will definitely be fixing this again.
