Lana's Sweet and Sour Meatballs

This is just as tasty as when my mom made it for me as child (but she lost her recipe). I subsituted the meatballs with Nate's Zesty Italian Vegetarian meatballs and it was still just as delious! Thanks, my husband and 4 year old love it too.

Filipino Lumpia

OMG! These are so delicious!!!, My mom use to make this when I was a kid and as it was cooking it smelt just like hers. The only thing I changed was the meat I used morningstar veggie crumblers. I made homemade sweet and sour sauce which was 1 tbsp corn starch mixed with enough water to make it slightly runny (set a side) then in a pot mixed 1/4c light brown sugar, 1/4c apple cider vinegar & 1/4 c water stirred the mixure in the pot and brought it to a boil and then added the corn starch mixture stirring til it was well mixed and began to thicken. The sauce was enough for about 9 lumpia but if you need more you have to use equal parts for the the ingredients like 1/2 c vinegar, 1/2 c water, 1/2 cup brown sugar and 2 tbsp corn starch. Oh yeah I also added a little ketchup to give it a redish color. Anywho my husband thought it was the Indian chutney from the store. And he gave me a thumbs up on the lumpia so I will consider it as a meal on our list. YEA!

This was wonderful. I followed the directions but also took in what others said about it being bland so I threw in some curry and cumin, microwaved 2 potatoes (4 would of been to much, but I was only making it for 2 and it was still to much) for 2.5 min which I think really helped, I couldn't of seen them being cooked the way it was written without adding more time. I also added more cilantro because I love it and just enough water in the end to make a smooth texture rather than sticky or clumpy.

Delish!! I'm a meat eater and my husband is a vegetarian, but doesn't like a lot of veggies (go figure) so I'm always trying to find new recipes and this one is defintely a keeper. Nice flavor and very very easy and quick, was done in exactly 30 min from start to finish and that was in the middle of me making cookies too! The only thing I changed was is the amt of onions, and I love onions, but the medium onion after I chopped it out seemed like a lot so I would say maybe a small onion. I also did 1/2 tsp pepper vs the 1/4 to add a little zing. But again I LOVED IT!!!

Incredible Potato Casserole

I absolutely loved this and so did my kids, which made it a big hit for me, and my husband loved it even more and that made it an even bigger hit, since he's picky. I added some veggie crumbles, corn, peas and extra cheese to make it a main dish. This was so quick and easy (especially using the already shredded hash). This will most definitely be put on my dinner list.
