Rich and Creamy Tomato Basil Soup

Authentic Enchiladas Verdes

Used mozzarella instead of queso fresco. Used only 3 peppers without the seeds and membrane. Very fresh and authentic tasting. Worth the effort.

Mexican Rice II

Used fire roasted crushed tomatoes instead of sauce. Added garlic and a little cumin to the mix. Basic, normal, excellet. Will make again.

Eggplant Mixed Grill

More like a 3.5... i used eggplant, zucchini, and yellow bell peppers as well as a sweet onion and white button mushrooms. Really good. Took at least 20 minutes to cook, if not longer.

Super-Simple, Super-Spicy Mongolian Beef

Used 1 tsp of pepper flakes. Spicy enough with that! Easy to make. Needs a little extra pizazz but idk what yet. Will make again with adjustments.

Authentic Louisiana Red Beans and Rice

Paid $4.50 for a pound of andouille sausage. It was nothing special. No better than smoked sausage. It was good but not earth shatteringly amazing... Might make again but not a top recipe.

Melt-In-Your-Mouth Meat Loaf

It was only ok. I used a mix of lean ground chuck and ground turkey. The flavor was a little bland. I made extra sauce to go on top and that helped some. Not my favorite recipe. Probably wont make again since my hubby said it was a ** recipe.

Real N'awlins Muffuletta

Didnt have all the meat ingredients. Made do with pepperoni, salami, ham and turkey. The olive dressing was UNBELIEVABLE! Would double it next time... Makes for a nice change from the typical sandwich. Good for company too...

Southwestern Egg Rolls

Pretty good. Used Amy's Cilantro Cream sauce as a dip. Rolled them, placed them on a baking sheet, sprayed with Pam, baked until golden brown.

Ate it with chicken fajitas. And then as a dip. Very similar to some dip i have had at a mexican place close to here. I like it. Going to make southwest eggrolls tonight and use it for that too. Might even work as a salad dressing. Made 2 cups.
