Quinoa Chili

This was a great healthy meal. I love how you can make it vegetarian by omitting the meat which we did. It was so satisfying and filling and made enough for a few more dinners and lunches throughout the week. I made mine pretty spicy but really enjoyed it with a little melted cheddar on top and a dollop of plain Greek yogurt to cool it down. Will be making this again and again, many thanks for the recipe!

Sam's Famous Carrot Cake

I made this for my boyfriend's birthday because he is a huge carrot cake fan. I've actually never made a carrot cake before, but this recipe really had everything and I loved the story behind it so I knew it would be special. The only changes I made were to add more cinnamon and a little nutmeg since my boyfriend is a huge cinnamon fan. Since I wanted it to be more like a birthday cake, I baked it in two 8" cake pans instead. There is a lot of batter and part of me knew when I was filling the pans I had filled them a little too much... rookie error. Since the cake is so dense, I found my cakes cooked a little bit unevenly. The outsides were getting crisp but the middle was still gooey. This was my mistake for departing from the original recommendations. If you do bake in cake tins, be sure not to fill them too high. Luckily, this recipe is very forgiving. Although the middle was a little more moist than I would have liked, after spending some time in the fridge overnight it firmed up nicely and now I don't notice a problem. The flavours developed even better overnight too! It is really a fantastic recipe and thank you to the poster for sharing such a family gem. Sam's legacy really lives on by making so many people happy with this wonderful cake.

Kristin's Fudgy Brownies

I was looking for a brownie recipe that was dense and fudgey and thought these might do the trick. These were pretty yummy but they turned out a little more cake-y than I was hoping for. I'll keep searching for my dream brownie recipe but in the mean time I'm sure I'll have no trouble finishing off this pan ;)

Lebanese-Style Red Lentil Soup

This is very similar to my the soup at my favourite Lebanese restaurant. It's just so comforting. I followed the directions exactly and was very pleased. I want to make some fattoush with this... what an authentically yummy lunch that would be!

Sardines with Sun-Dried Tomato and Capers

Yummy yummy! As iloveolilveoil advises this recipe is super good even without the capers and sun dried tomatoes if you don't have them on hand. I'm easily turned off by the fishy flavour of plain sardines from a can but I've really been trying to find a way to make myself like them. The lemon, garlic and spices balance the strong flavour out very well... it's hard to believe I'm eating sardines! I used canned sardines with jalapeno peppers so to compensate for the spiciness I omitted the red pepper flakes. I think I could eat this everyday its just so easy, healthy and refreshing!

Pita Chips

These are great! The spices were not too overpowering so they can work with any dip but are also fantastic on their own. I love how easy and healthy they are, especially using whole wheat pitas. So much more satisfying than a bag of store bought chips :)

Banana Pancakes I

These were pretty good! Not as fluffy as I would have liked but definitely very moist. I added a bit of vanilla for extra flavour, but that's the only change I made. Sure did the trick to satisfy my late night sweet tooth ;)

Actually Delicious Turkey Burgers

These are fantastic! To my frustration, when I was in the middle of making these, I realised that I ran out of eggs! I added some milk instead and crossed my fingers for the best. With some gentle handling, they actually ended up holding nicley. The only additions I made were to add a dash of hot pepper sauce, worcestershire sauce, some tyme and a pinch of cumin. Served them up greek style with melted feta, home made tzatziki, chopped kalmata olives, sundried tomatoes, red onions, spinach leaves and fresh tomatoes. So good! Thanks for posting this great healthy alternative! :)

Chipotle Mayo

Excellent with lime juice and a clove of garlic as others have recommended. Served it with sweet potato fries and it was great. We've been using the left overs on sandwiches too. Very versatile and perfectly spicy :)

Healthy Garden Salad

This was a wonderful healthy salad. The only change I made was to add some lime zest and I omitted the sugar because I don't mind a tart vinagrette. It tasted even better the next day once the flavours really had a chance to come together. Definitely a keeper! Love it!

Six Can Chicken Tortilla Soup

As others have suggested this was a really great base. Turned out really yummy with green peppers and onions, rotisserie chicken, cumin, chili powder, thyme, salsa, lime zest and lime juice and garnished with tortilla chips, shredded cheese and a little sour cream. Next time I'd like to try it with some cilantro as well!

Easy Sausage Strata

This was pretty good but I found it to be a little too salty. Next time I will omit the added salt to see if it helps at all. UPDATE: I made this again without the extra salt for Christmas morning and it was much better. To be extra sinful, serve with some maple syrup on top. It cuts the salty taste and gives it a little somethin extra ;)

Peanut Butter Bars I

These are really good and so easy to make! My boyfriend couldn't get enough of them! He practically ate the entire thing and made me give him the recipe so he could make them for himself too. I've made these a couple of times, and everyone I have shared them with has loved them. These are definitely a hit!

Lime Chicken Soft Tacos

I started making this recipe as written, but I found it to be too bland for my tastes so I improvised a little. To begin with, I used shredded chicken instead of cubed but I added more lime juice (one and a half limes), a jalapeno pepper and cumin to give it some more spice. I also charred some cherry tomatoes in a separate pan and added those as well. With these changes, it turned out much better than what I had originally made. The recipe was a good starting off point though!

Absolutely Fabulous Greek/House Dressing

Really yummy! It gets better after you let it sit for a few days and the flavours all come together. The only change I made was I used equal parts EVOO and vinegar to take away some of the bite since it is a little tart.
