Blueberry Nut Oat Bran Muffins

Love this recipe. It's healthy and still tastes good. The muffins are moist and not too sweet. Substituted 2 eggs for egg subst., mashed bananas for 1/2 the applesauce & used twice the cinammon and vanilla. They're delicious with or w/o nuts.

Homemade Black Bean Veggie Burgers

This is a great recipe. I used 2 eggs and an 2 extra Tbsp of bread crumbs and they held together nicely. Added 1 Tbsp of chili sauce and it didn't seem very hot. Enjoyed with traditional hamburger condiments (ketchup, mustard, mayo). Yum y!

Ladyfinger Lemon Dessert
