Mom's Zucchini Bread

It was absolutely delicious. The loaves have a nice crust but moist on the inside. It took about 65 minutes to bake. I felt like it was funny looking until I added the un drained zucchini but then it incorporated and made a nice batter. I'll never use another recipe for zucchini bread!

Light Avocado Egg Salad

Delicious!! It's a great change to regular egg salad. The first thing, though, is 15 minutes is too long to let the eggs sit in hot water. 12-13 minutes cooks it properly. Second, I used a whole avocado because we LOVE them. Served it on toasted bread. Yum! Our 18 month old was even a huge fan!

Banana Sour Cream Bread

Yum!! I omitted the nuts and cooked the loaf for 1 hr 5 minutes for the proper doneness. I only made one loaf so I changed the serving size to 8 and it came out perfect.

Tacos in Pasta Shells

We LOVED it!!!! I used taco seasoning, doubled the cream cheese, and used hot taco sauce. I put a cup of taco sauce in the bottom if the baking dish and this kept them from drying out. I don't agree when people say its wrong to rate a recipe a five when you change it because I just altered it to OUR personal tastes but am sure the original recipe would be a five, too. We will definitely be adding this to our repertoire!

Awesome Slow Cooker Pot Roast

This is an awesome pot roast with a few changes!! First off, I seasoned the roast with salt, pepper and garlic powder. Then, I seared roast in very hot vegetable oil. I did use cream of mushroom and dry onion soup mix but I added 1 cup beef broth, 1/2 cup red wine, and two tablespoons Worcestershire sauce. I cooked it on low for 9 hours. Mmmmm! We loved it.

Double Layer Pumpkin Cheesecake

This has been a staple at Thanksgiving in our house for 3 years now. Make sure your ingredients are brought to room temperature and let the cheesecake cool for an hour in the oven after you turn it off. I tend to like using 3/4 cup of pumpkin pie filling instead of the pumpkin with spices. I do, however, add some pumpkin pie spice, nutmeg, and cinnamon to my pumpkin pie filing. I bake 55 minutes at the recommended temperature for the correct doneness.

Bacon Cheddar Deviled Eggs

These are delicious!! I have made them quite a few times! I follow the recipe exactly except I add green onions on the top. This puts them over the edge! My family likes them better than the traditional deviled eggs :)

Italian Spaghetti Sauce with Meatballs

This is a great recipe!! I added some more garlic in the sauce and added some italian seasonings into the meatballs and it was so delicious! I rolled my meatballs a little big so I had to cook them for a little over 45 minutes. I served it with thin spaghetti, homemade garlic bread and a cesar salad! 5 stars!

Garlic Alfredo Tilapia

This was so delicious! We loved the spiciness and creaminess combined together! I followed the recipe to a tee and I wouldn't change a thing. If you do not like spice, however, substitute the seasoning with Old Bay. I served it with some pasta and asparagus and the pairings were perfect. Watch the tilapia in the oven, it will be done before you know it!

Bertolli Classico Asparagus Saute

This is a wonderfully simple way to sauté asparagus! I put in the garlic half-way through cooking so it wouldn't scorch. My asparagus was done in about 7 minutes. Go off of color, not time. When it is a beautiful dark green, it is done!

Sour Cream Coffee Cake III

I love this coffe cake! It is light and moist and always a hit. I add a 1 tsp of vanilla and a few sprinkle of cinnamon to the batter and do not bother with putting the topping in the middle. I just sprinkle all of the topping on the top! :)

Peaches 'N Cream Pie

This was delicious and super easy! My whole family loved it. Next time I will add another can of peaches but that is the only thing I would change. I used my stand mixer for the whole thing and that made clean up quick!

Vera Cruz Tomatoes

We liked this recipe. It was not nearly as heavy as I thought it would be and the amounts were perfect to stuff 4 medium sized tomatoes. I cut the tops off of the tomatoes and scooped out the insides with a mellon baller. I added a bit more spinach, about a quarter cup, and a bit more bacon, 4 slices. I put a little cheese inside of the mixture and put the rest on top at the end. My only complaint is that I would have liked some crunch in the meal, perhaps some croutons or serving it with a grilled cheese. I will make this again but as a side dish and with cherry tomoatoes. Thanks for the recipe!

Chewy Chocolate Chip Oatmeal Cookies

These cookies are the best thing in the world as long as you make them right and cut the salt way down (1/8 teaspoon), add 1/2 C more flour and 1/2 Tablespoon more baking soda! Make sure to barely mix the dry ingredients to the wet and they will be nice and fluffy! Everyone loves these!

I make this as is with the exception of doubling the sauce, adding a touch more soy sauce, and adding 3 cloves of garlic. It is beyond delicious!! yummmmm We love this and have it quite regularly. Thanks!!

Homemade Butter

This was great and so easy! It was so neat watching my stand mixer whisk cream into butter. I usually do not like salted butter but this recipe needed the salt, in my opinion. I ran my stand mixer on speed 8 for around 10 minutes and then pressed out the liquid with the back of a spoon.

Beer Dip I

This is so delicious!!! I made it last night for our tailgate on Saturday and we can't wait to taste it tomorrow seeing as it is completely delicious right now! I made a few changes, though. I doubled the recipe and used 2 cups sharp cheddar and 2 cups pepper jack cheese. I used fiesta ranch packets to give it more kick and I added more beer than it called for, about 1 and 1/4 C total (I used Miller lite). I also added green onions and a few dollops of sour cream. We are serving it with pumpernickle and onion pretzels and honey wheat pretzels .

Quick and Easy Chicken Noodle Soup

This soup is great for a quick meal! I have been making a similar recipe for years. I doubled the veggies and sauteed all veggies with margerine and 3 coves of garlic. I cooked the chicken in the broth which I also put a can of low fat cream of chicken. I used no yolk noodles and put the cooked noodles in the last 10 minutes of simmering. I added rosemary, thyme, oregano, italian seasoning, pepper, and garlic salt. Yum!
