Eggplant Parmesan II

Holy smokes!!! Made this for a Christmas Dinner for 13 people and every single person, aged 11-76 just loved it. I used an excellent pasta sauce by Rao's, and get this, I made one casserole for my mother with Pecorino cheese (made only sheep's milk) who cannot have any milk products whatsoever. She hasn't been able to have Eggplant Parmesan in 20 years. She had seconds. I made a nice green salad with Pomegranate seeds, mandarin oranges, candied peans and crumbled feta cheese, along with artisan french bread. Killer.

Quinoa with Asian Flavors

Loved this one and so did my kids. A great variation to fried rice and a ton healthier. I made it with low-sodium soy sauce, more ginger (as suggested by another reviewer) and served it with Ma Po Tofu with Eggplant. It was delish. I felt like a vegetarian gourmet cook! :)

Creamy Chicken and Wild Rice Soup

My 6th grader had to make a soup for her reading class (they were reading books on food, cookbooks, cultures) so we made this soup and I was blown away at how it tasted. The day we brought it to school, I actually had kids run up to my car in the parking lot to tell me how they loved the soup and that they had seconds and one pigglywiggly had thirds. I doubled the recipe and used all the meat from one rotisserie chicken to speed things up. I will try the lower fat versions several have suggested when I make it for me.
