Carrot Cake
Awesome!!! So yummy! Huge hit! Will definitely make again! Modifications as recommended by other reviews: 1 C brown sugar and 1 C white sugar, 3 C confectioners sugar instead of 4 for frosting. I used sweetened flaked coconut, wasn't sure as it wasn't mentioned. I will try unsweetened next time and see which I prefer.

Thai Chicken Stock
Amazing!! I couldn't find Kaffir lime leaves in time, so I subbed in lime zest. The broth turned out fabulous and made my Tom Yum soup delicious. The chicken itself, was also amazing! I used half of the chicken in my coconut curry recipe and saved the other half to use later. It was very tender and flavorful, great just to munch on.

Jet Tila's Tom Yum Goong Soup
Awesome!! I forgot about Tom Yum soup until I had some delish soup at the Thai restaurant next door. My friend and I agreed that this soup we made was WAY better than at the Thai restaurant! I was unable to find the kaffir lime leaves so subbed extra lime juice, it still turned out great.
