A fabulous, thick and hearty soup! Highly recommend, especially to use up leftover chicken. I substituted one fresh jalapeño for the can of green chilies and regular chicken stock for the condensed broth and water because that is what I had on hand. I used leftover chicken from the “Busy Day Chicken” recipe on this site. I then prepared it exactly as directed. After 15 minutes of simmering, I decided to add a little more spice for my taste. I added in 2 teaspoons each of cumin and smoked paprika, plus one teaspoon ground coriander, and simmered for another hour. I also had all of the optional toppings. This recipe makes a large amount, and I thought I would be able to freeze the leftovers to have for quick lunches, but there were no leftovers! My husband, who normally turns his nose up at soup loved it! We had unexpected company the next day and served the soup. It was gobbled up with rave reviews!
