Coco's Meatloaf
Awesome meatloaf... Meatloaf is one of my husband's all-time favorite foods. Unfortunately, it is one food I've never really made well. Even though I don't dislike meatloaf, I never cared for it enough to learn to make it. My first few attempts were-- well-- not good. When I saw this recipe, it seemed like it would hit the mark. After all, how could a grandma named Coco be wrong? It did hit the mark! My husband LOVED it. He even commented, "This will make kickin' sandwiches tomorrow!" He said Coco definitely knew what she was doing. I even had a second helping. :) The texture is spot-on which can make or break a meatloaf in my opinion. The blending of the veggies was a genius idea and actually made prep faster because I didn't have to spend extra time carefully chopping. (I admit that I did throw a couple of garlic cloves in the blender.) Thanks Coco and Steve!

Busy Day Chicken
So very easy and versatile. This gives you an entire chicken to reinvent multiple ways throughout the week with very little effort involved. I do recommend sticking to the recommended cooking times. Mine did get a little dry, but it was my fault for cooking it too long. I used Stubbs Original BBQ sauce. I served it the first night with mashed potatoes and corn. Still had enough leftovers to reinvent it into chicken enchiladas one night and chicken tortilla soup another night. I used the “Chicken Tortilla Soup I” recipe by Star Pooley found on this site. Highly recommend it if you have leftover chicken, especially with the sweet and spicy tang of this chicken cooked in Stubbs sauce.

Chicken Tortilla Soup I
A fabulous, thick and hearty soup! Highly recommend, especially to use up leftover chicken. I substituted one fresh jalapeño for the can of green chilies and regular chicken stock for the condensed broth and water because that is what I had on hand. I used leftover chicken from the “Busy Day Chicken” recipe on this site. I then prepared it exactly as directed. After 15 minutes of simmering, I decided to add a little more spice for my taste. I added in 2 teaspoons each of cumin and smoked paprika, plus one teaspoon ground coriander, and simmered for another hour. I also had all of the optional toppings. This recipe makes a large amount, and I thought I would be able to freeze the leftovers to have for quick lunches, but there were no leftovers! My husband, who normally turns his nose up at soup loved it! We had unexpected company the next day and served the soup. It was gobbled up with rave reviews!
