Coconut Walnut Tart

Reviewed: Jan. 3, 2012
I thought at first this came out completely wrong, but I think it's supposed to be a little goopy. I wish there was more information on what the end product is exactly (texture/consistency). Great with vanilla ice cream because it is pretty rich.

Boardwalk Quality Maple Walnut Fudge

Reviewed: Jan. 3, 2012
Really good, but the white chocolate taste is a little too much for me. I'm going to try next "Maple Walnut Fudge" like another reviewer suggested. I like fudge with marshmallows! :)

Pumpkin Date Bread

Reviewed: Oct. 6, 2011
This is a nice recipe. The bread came out moist and flavorful, but it didn't have a strong enough pumpkin taste. Also, the dates don't have an identifiable flavor. I will not make this again because I will try to find another recipe that has a stronger pumpkin-y taste.

Old-Fashioned Soft Pumpkin Cookies

Reviewed: Sep. 18, 2011
These are a little bland. I didn't expect that. I did add a little (dash or two) of Pumpkin Spice. Next time I will add about 1 tsp. of Pumpkin Pie Spice and/or a spiced glaze. I love how soft they are, but I was left wanting a stronger taste. My family agreed the flavor was mild. ** I actually think the flavor got stronger when they sat longer. Maybe it's just me. These are delicious and addicting..very cakey though, but I like that.

Peanut Butter Haystacks

Reviewed: Oct. 20, 2009
These are SOOOO GOOOOD! My friend in highschool taught me these, but without the peanuts. I sometimes prefer them without so I make a double batch, half with, half without peanuts. OH-MY-GOD GOOD.

Apple Dumplings I

Reviewed: Oct. 20, 2009
These are great! Very tasty. I couldn't stop eating them. The only thing I differently was I put some brown sugar on top of them before baking and used less white sugar. My mom just came back from Apple Hill (CA) and talked about an apple pie with brown sugar in the filling. This came out so good! Thanks so much for this recipe!

Taco Rice

Reviewed: Oct. 20, 2009
This recipe is AWESOME! We LOVED it! Black olives is one of our favorite foods so this is perfect. I had no idea how to put rice in tacos and have it taste good. Now I know how to make is taste amazing. Thanks so much! And I can't believe I had all the ingredients already. Although I didn't have "instant rice", I just made some in 15 min. and added the rest of ingredients. I fried corn tortillas, made some taco-seasoned shredded chicken with diced tomatoes, put that on first and then the rice mixture. It held all the chicken in place and no need to top with cheese since it's already mixed into the rice, just some sour cream. YUMMY!

Snoogy Chicken

Reviewed: Oct. 7, 2009
This recipe is great! I will be making this again. I halved the recipe and used chicken tenders (all I had) instead of breasts. I just reduced the cooking time to about 20 minutes. I served this with rice and broiled potato slices w/ ketchup which went well with the tomato sauce. Super simple recipe, I love it!

Award Winning Soft Chocolate Chip Cookies

Reviewed: Oct. 7, 2009
These cookies are AWESOME! We loved them! They are incredibly soft! -but not cake-like at all as some people have commented. I wanted to give this recipe 5 stars, but I added some things: 2 tsp. baking powder, 2 tbs. vanilla extract and 1/2 tsp. salt. I also let the butter and eggs get to room temperature before using and chilled the dough before scooping onto the baking sheet. I used a (heaping) tablespoon to size the cookies. This will be my go-to chocolate chip recipe from now on.

Chicken Stir-Fry

Reviewed: Sep. 29, 2009
This is basically the same recipe as "Broccoli Chicken Stir-Fry" except no onion or celery(I don't use onion, celery or carrot), and you don't coat the chicken with cornstarch, you mix it with water til smooth and pour into the pan. I think that way is better. I've made chicken by coating w/ cornstarch before and it does leave the chicken with a funky, mushy coating after it's cooked. I don't understand the need for that method.

Slow Cooker Carnitas

Reviewed: Sep. 17, 2009
This is a pretty good recipe although I didn't follow it exactly. I left out the cinnamon. And to get the great carnitas taste you must have chipotles and adobo sauce. I seeded and minced 2 chipotles and added 3 tbs. adobo sauce. I also used minced garlic instead of garlic powder. Ground that with a pestle and mortar with other spices. I used more than 2 cups of chicken broth to cover the meat completely and after I shredded it, I spread in over a foiled baking sheet with a few ladle-fulls of the broth and baked it for 15 min. @ 400, halfway through, stirring meat around. I bought 2-2 lb. cuts of pork shoulder, bone-in and served in on corn tortillas with lime juice and Tapatio sauce.

Chunky Potato Soup

Reviewed: Sep. 8, 2009
This is a great recipe! I used red potatoes, left out the onion and celery, and I added some onion powder. Also, I did not have fresh parsley so I used some dried and added dill weed and cayenne. I used swiss cheese, but substituted some with cheddar. This would be great with bacon on top. Thank you for this recipe!

Mustard Oil Dressing

Reviewed: Sep. 5, 2009
Great recipe! I was trying to find a recipe similar to my grandmother's. I bought a pestle and mortar specifically to make her recipe and realized I had bought Dijon, but it should have been Grey Poupon. I think that does make a difference because this dressing is almost as good, but not quite the same. I ground minced garlic (store-bought), salt and pepper in the mortar, added the rest of ingredients, and whisked. Also, I topped with sliced olives. Very good!! Thank you!
