Zesty Quinoa Salad

This is great. Feel free to add other vegetables. We like it with garbanzo beans and cucumber. Be careful - it was too salty for us as written. Delicious and healthy!

Chicken Parmesan

This is great and easy, if not light. It was a great special meal with angel hair pasta, a salad, and garlic bread. We used half panko and have seasoned breadcrumbs. Note that the Chef John video is not for this recipe.

Creamy Chicken and Wild Rice Soup

This is our go-to soup recipe. We love it! We use Uncle Ben's fast cooking wild rice. I use milk instead of cream and it still turns out creamy and delicious. I add sweet frozen corn and whatever vegetables the crowd will eat. Easily doubled. Thanks for a great recipe!!! :)

Banana Muffins II

These are great and easy. I added 1 tsp. vanilla and 1/2 tsp. cinnamon. I wish I'd skipped the cinnamon; it's good but tastes spiced rather than simply banana flavored. I substituted 1/2 cup applesauce for the butter and it worked fine.

Campbell's Apple Strudel

I usually find strudel to be dry and not sweet enough, but this was great once I doubled (and then some) the sugar. Granny Smith apples and golden raisins were perfect. My son's pre-K class loved it! I also used more apples than it called for. Allow 40-50 minutes for your pastry to thaw. If you want your top to be smooth, be sure not to add apples to the top half of the pastry dough before you roll it up.

B and L's Strawberry Smoothie

Really good! We made it just like the recipe using frozen strawberries, plus I added one small container of Activia light vanilla yogurt. This doubled well and fit into my medium-sized blender. Lots of fun to make with kids. Thanks!

Wilted Spinach with Cherries and Goat Cheese

So good! I used cranberries (didn't have cherries), added bacon bits and sugared pecans. Did not require any additional dressing. Definitely a keeper - thanks!

Honey Oatmeal Bread II

I love this recipe! I've found that it's very important to use bread flour. When I switched, I found that I used less flour -- about 5 cups total. I also did not like the results when I doubled the yeast. Be sure not to rush! You can extend but not cut back on the recipe times. I use my Kitchenaid mixer to knead -- two minutes at level 2. I divide mine into three smaller loaves.
