As a teacher, it's been wonderful to have the summer off and try new recipes for my low carb diet. I've been testing some on the kids to see if they notice the difference... they usually can't! For example, I made meatloaf low carb by using crushed pork
rinds instead of bread crumbs, and beef broth instead of milk. They really liked it and my daughter even thought it was better than regular!
So, I've been dieting now for 16 weeks, and am officially down 34 pounds. It's been both easy and tough... when I'm eating low carb, I get to eat quite a bit of food, so I usually feel full and satisfied. However, I still have the ice cream and pizza
cravings... I know there are low carb ice creams out there, but you only get 1/2 cup serving, and I'm afraid I will eat to much and go over on my carbs... And, I did try the portabello mushroom pizza; it was pretty good, but not quite the same...
Now, with school starting next week and me having to go back to work, I hope I can keep up my diet! If anyone has any tips, or advice for sticking with low carb while working, I would love to hear it! I do have the use of a refrigerator and a microwave.
