Giant Chocolate Chip Cookie

I made this yesterday with the little girls I nanny. They had a blast baking and decorating it! I used a 14 inch round cake pan. We piled the dough in the middle of the pan, placed parchment paper on top and smoothed it out until it was about 2 inches from the sides. It cam out great! Has anyone tried to take one of these cookies out of the pan in one piece? I was nervous it would break because it's SO big.

Italian Spaghetti Sauce with Meatballs

We make this recipe at least once a month. My husband requests it frequently. I do puree all of the ingrediants in the blender before I put them over the stove. I also use half hamburger and half Italian sausage for the meatballs. I make the meatballs smaller and I just let them cook in the sauce like the recipe says. I have even made it without meatballs. It's just a terrific sauce.

Baked Oatmeal I

It's only my husband and I so I make half of the recipe, which will last for two meals. I will refrigerate the leftovers and reheat them in the microwave for breakfast the next day. I have used blackberries and strawberries, and both are wonderful. I make this recipe twice a week! I also serve it with a little cream on top and drink a glass of milk with it.

Banana Pudding II

I just made this recipe for the first time. My husband and I both agree that it is great! Next time I may add meringue to the top and bake it until it's brown like another reviewer suggested.

Chewy Chocolate Chip Oatmeal Cookies

I made these for Christmas gifts. Everyone raved about them and said they were the best cookies they had ever eaten. I used pecans instead of walnuts and used a little less salt. To keep the cookies from flattening out, make sure the butter is room temperature before attempting to make batter.

Emily's Famous Marshmallows

I just made them! I didn't have any problem or explosions. I spent some time prepping: First I mixed the sugar, syrup and water and just put it is a large nonstick saucepan on the stove. Next I mixed the gelatin and water in the top of a double boiler and set it on the stove. Then I beat the 2 egg whites like the recipe suggested. After all of that I boiled the syrup mixture and heated the water in the double boiler to dissolve the gelatin. I also used a candy thermometer for the syrup mixture. I don't have a standing mixer, so I poured the gelatin/syrup into a smaller more manageable container and slowly added it to the egg whites. I had to beat it for quite a while on high, but it came out great! I also used peppermint and little vanilla. Finally I mixed a little food coloring into it! :)

Hot Spiced Cider

I made this for a fun fall party and everyone LOVED it. I only put 2 tablespoons of brown sugar in it and I made it in my coffee pot. It was quick and easy. Just be sure to immediatly run water through your coffee pot several times afterward. It also made my house smell delicious :)
