Famous Chicken Adobo

This is delicious. I used redwine vinigar and added some ginger (1T) and used chicken breasts. Out of this world. :) Next time I think I'll add just a little less pepper though, and thought I might put a little green pepper in it. I can't wait to try it again!

Slow Cooker Creamy Potato Soup

This is a great recipe, I substuted the evaportaed milk with a can of cream of mushroom soup and used fat free half and half. I also doubled the recipe and shared with friends and boy did we enjoy it!

Beef Enchiladas I

Great recipe. I did make a few changes, used hamburger vs. steak and put a bit more onion and garlic in that recipe called for. They were YUMMY! I'll use this recipe over and over again.

Chicken Vegetable Stew

This was a good meal, easy to fix and very good. I added a few things, some squash and some veggies that were left over from another meal. I'll probably make this a lot this winter, I love that chicken is making stew!

Teriyaki Chicken for the Busy Cook

This was really good, but I did some tweeking! I added onions, some green peppers, garlic, and used OJ instead of carbonated drink. I would use about 1/4th less soy sauce as it was quite salty (I did use low salt soy sauce). I will be keeping this one. :)

Oregano-Lemon Chicken

This was very very good. I added some onion to it since I love onion, but other than that, I left it exactly as is! Very tasty and a huge hit at my house. (people are fighting for the left overs!)

Chicken Tacos

This was wonderful! I too made a few changes, I used powdered no cal drink lemonade mix and it worked really well. I added some chili with lime powder to give the chicken a little more kick. I also used fat free sour cream, and home made fresh salsa. Also used lite taco cheese. I added some fresh cilantro and mexican green onions too. Next week when I make this again (yes, it's that good!) I'm going to add some black olives and some red onions to the cooking chicken. Great recipe, I would never have dreamed of using lemonade to cook chicken in!!

Pollo (Chicken) Fricassee from Puerto Rico

This is a wonderful dish. I made minimal changes, added some sliced bell pepper and diced onions with the potatoes. I added some extra pepper and some Mexican Chili powder to it and next time (and yes, I will cook this again!!)I'll probably double the chili powder. My slow cooker took about 6 hours on high to get the potatoes done. The chicken was moist and sooooo tender. I used chicken breasts (about 2.5 lbs) instead of legs.

Beer Cooked Chicken

I made a few changes for this recipe, and did my best to not add a bunch of calories and fat! I used 2 tsp. of chopped garlic and 1 medium chopped onion. I also put a sprinkle of smokey paprika and some pepper on the onions, mushrooms and galic as I sauted them. I also had to use canned shrooms and used the juice form those as well to simmer the breasts in. This was WONDERFUL! The chicken was moist and fork tender. This is going to become a regular in this house! Thanks for sharing. :) Happy Cooking.

Crunchy Tossed Salad

This is SOOOOO good! I made it and took it to a church lunch and it was GONE very quickly. The dressing alone is fabulous. I've used it on a spring mix salad instead of Iceburg and it's very good. I've also made the dressing with Splenda instead of sugar to pare down a few calories. This is a keeper for sure.

Slow Cooker Orange Chicken

I made this and added a few touches, a tbs of ginger, and a tbs of pepper and a tbs of garlic. 2 fresh chopped small onions and some green onions as well. It was good and I will make it again. I'm going to try using OJ next time instead of the orange soda. :)

Chicken Sopa

I added onion and fresh garlic along with some hot peppers and it still was bland. I would add cumin and crushed red peppers and more jalapeno peppers to it at minimum if I try this again. I would probably add more cheese too. And maybe even a package of taco/burrito seasonings. But like others, I was dissapointed and expected more taste, esp. with adding the things I did.

10 Pound Cheesecake

Very good cheesecake. I made it this morning and it's setting up beautifully and tastes wonderful (licked the mixer beater!) I'll be sharing it with wonderful family tomorrow and I cannot imagine that they won't love it! Thanks for posting this. And by the way, I used my big stand mixer and it was easy easy easy to make!

Waffles I

Excellent. The only thing I did differently was to use coconut oil and I tripled the vanilla and sugar. YUMMY. I've been using a store bought mix for years, I had no idea waffles could be so good. :) I will use this recipe forever!
