I'd like to add: We make extra filling and eat it on yogurt or cereal or plain. Besides being tasty, it really helps... hem... move things along :)

Dark Chocolate Cake I

I made one layer (1/3 or 4 servings)and used 2 eggs instead of "1 1/3", which produced a very moist result. i also used hazelnut-flavored coffee instead of plain water. when the cake was done, i sprinkled chocolate chips on top and let the residual heat melt them so i could spread them into a smooth top (note: if you do this, make sure to cut into peices before chilling, otherwise the chocolate will be very hard and not cut well).

Cobb Breakfast Casserole

if you're not a huge blue cheese fan, i recomend only using 1/2 a cup of it, or any kind of cheese works. i love making this on sundays with my girlfriends before going out running, it keeps us going all day! sometimes we substitute egg whites, turkey bacon, and low fat yogurt.

Best Chocolate Chip Cookies

"very very very very good" said my boyfriend after thoughtfully chewing his third cookie. after the fourth, he said "this is a cookie experience". i agree, not too cakey, not too crunchy. and they get that beautiful wrinkly look as they dry.

Best Toffee Ever - Super Easy

no one can resist home made toffee like this! sometimes i add corn syrup which makes the toffee more glossy and clear (it tastes the same, the two forms of sugar keep eachother from crysatlizing).

Rum or Bourbon Balls

how easy and soooo good at bringing holiday spirit! i used pyrat reserve rum and rolled them in coconut flakes, chopped roasted almonds, cocoa powder, or powdered sugar. a little trick i found to help bigger things like nuts and coconut stick to the outside: roll them in a little water and then roll them in the desired coating.

Saltine Toffee Cookies

wow! i also made a batch with roasted-blanched-slivered almonds on top and no chocolate and it turned out great. just press the nuts a little into the toffee before it hardens. i'm bringing it to all my christmas/hanukkah parties this year. growing up, we used to make "matzoh-roca" (almond roca using passover matzoh instead of saltines) but this is perfect; the salt adds a perfect ballance to the sweet toffee but unlike pretzels, they are are delicate and flakey.

Best Big, Fat, Chewy Chocolate Chip Cookie

i made these using only 3tbs. of butter and the rest applesauce and they were fantastic! i made them for my boyfriend's mother who was comming to town and she and he both enjoyed them, they are a lot like chips ahoy chewy, but better because they are home-made!

Whipped Cream Biscuits

i made this one morning and my boyfriend ate them all for breakfast. he loves fluffy southern drop biscuits, so i didn't roll them out, i just dropped them onto the pan. he asked me to make them for thanksgiving this year, they were sooo good. this time, however, i'll try it without whipping the cream.
