Quick and Easy Brownies

Reviewed: Apr. 16, 2009
This was a good recipe, but when baking a double batch in two separate pans, it is not quick. I followed the recipe, with my only modification being the addition of mint chips in the batter. The texture is very good, not too cakey at all. My husband loved it!

Grandpa's Peanut Butter Fudge

Reviewed: Apr. 15, 2009
This was my first attempt at making fudge. I followed another reviewers' tactic of putting it in the kitchen aide mixer for 15 minutes, and not adding the peanut butter until that stage. I also added a small amount of cocoa, because I can't resist chocolate and peanut butter together. Next time, I will make strait peanut butter fudge, using this recipe. I also used powedered sugar (confectioner's sugar) since I had read in other recipes that you should use powdered sugar instead of granulated. I make treats for my husband and his coworkers 3-4 days a week, and I get tired of making the same cookies over and over, so I thought I would try something else for a change. This recipe was so easy, it definitely overcame my fears of making fudge. The finished product was wonderful! Thanks!

Chocolate Mint Cookies II

Reviewed: Mar. 28, 2009
This recipe was incredibly simple to do, and the results were delectable. My husband, who does not like the Girl Scouts' Thin Mint cookies absolutely loved these cookies. I didn't have peppermint oil, just peppermint extract, but the results are great! My eldest and I love chocolate and mint, and we love these cookies. Thanks for the easy, great recipe.

Shawn's Study Snacks

Reviewed: Mar. 25, 2009
This recipe was exactly what I wanted! A soft, slightly moist cookie with a good banana flavor that wasn't too overpowering. I added mini semi-sweet chocolate chips and an extra 1/2 cup of oats, and they turned out fantastic! Plus, to cut down on clean up, I used the old trick of baking on parchment paper. For busy moms, this is almost a must. Thanks, Shawn, for a simple, yummy recipe.
