Caramel Corn IV

Reviewed: Oct. 18, 2009
I love this one! This is the perfect amount of caramel for 1 bag of microwave popcorn. I did not have a bowl big enough to stir this in so I sprayed my punch bowl with butter flovored non-stick spray, and lined a roaster pan with parchment paper for cooking. Every thing turned out perfect and clean up was extra easy. The butter spray gave only the tiniest hint of buttery flavor.

Garlic Cheese Chicken Rollups

Reviewed: Mar. 19, 2009
Words can't describe how good this is! No changes except I couldn't find the garlic spread so I made my own of whipped cream cheese, garlic powder and a vegetable seasoning blend that I had on hand. Very yummy.

Modenese Pork Chops

Just loved it! Added fresh mushrooms, it was a nice touch. Also used apple juice instead of dry wine. It was wonderful. Will make this again.

Easy Olive Martini Chicken

Reviewed: Jan. 27, 2009
Delicious and easy. Two of my favorite things when it comes to cooking.Wonderful blend of flavors with the right amount of pizazz. However instead of using the alcohol (makes me leary with the kids- even though I know there is no actual alcohol content left once cooked)and taking the advise of other readers about increasing the liquid amount, I used 1/2 C apple cider vinegar and 1/4 C apple juice, instead of any alcohol and it was awesome. The olives were unbelievably tasty, doubled the amount on those as everyone in my house loves olives. no other changes were made. Will make this one again and soon!

Slow-Cooked Tamale Casserole

Reviewed: Jan. 24, 2009
We liked this one. Doubled the recipe but as per other reviews, used 2 cups of milk, 3lbs of ground beef. And I must have the same crockpot as Diana, because mine did cook on high for right at 4 hours total. Over all a pretty good recipe and if you are looking for simple, this is it! Will put this one in my rotation to be used again in the future, probably not quite as often as others though.

Six Can Chicken Tortilla Soup

Reviewed: Dec. 23, 2008
Wonderful! I tried to cheat and use rotisserie chicken but deli was out so I cooked 3 breasts in skillet with favorite seasonings then added to rest of soup. It was a huge hit in my house and we are not big soup eaters

Southern Peach Cobbler

Reviewed: Dec. 23, 2008
best peach cobbler you'll ever make. There are never any leftovers! Note: instead of milk you can use 3/4 cup of juice from the peaches, use rest of juice with peaches on top. and don't try to double the recipe (I have a large family and double almost everything) but for some reason this doesn't turn out right when doubled. Also works wonderful with cherry pie filling I usually make one of each they both disappear.

Zucchini Bread IV

Reviewed: Oct. 13, 2008
I made this bread as is and with some of the suggestions. All versions were great. Added 1-2 extra cups of zucchini to all batches, added 1 C. raisins to one batch, and 2 C. carrots to another both were gobbled up before the oven even cooled! I also made some with all white sugar and some with 1/2 white/brown sugar, once again, both versions great. I even made some in mini muffin pans for bite size treats. The kids loved them. I don't think you can make a bad batch of this delicious bread. I'm hoping it freezes well. I'm putting some in the freezer for Christmas Goodie baskets.
