Flourless Chocolate Cake II

Made using light butter and Splenda Blend. Came out wonderfully and no one knew the difference. Big hit with the family at Thanksgiving.

Potato and Bean Enchiladas

Loved it. Added green chilies, onion, and garlic to the fillling. Substitute feta for the queso fresco but next time I think I'll try goat cheese. I thought the flavors were fabulous. Very flavorful, though not spicy hot. Not sure what people who found it bland did?

Spinach Enchiladas

LOVE this recipe. I have made it a number of times. I sub cottage cheese, blended in a food processor, for the ricotta. I have even used tofu instead of the ricotta - can't tell the difference. I also skip the butter and cut the cheese - use about 3/4 cup inside and 1/2 cup on top. Still AMAZINGly good and lower cal.

BLT Pasta Salad

Lightened this by using Uncle Dan's ranch dressing made with Best Foods low fat mayo and 1% milk (used all 2 cups) and using Smart Bacon (vegetarian meat substitute). Also used about 1 cup green onions (adds color)and increased the tomatoes a little and added lettuc. My DH said he couldn't tell it was low fat - highest praise!

Cheddar Beer Triangles

Very good. I used Miller 64 light beer and Bisquick Heart Smart, added about 1/2 teaspoon garlic powder, used reduced fat cheese and added 1/4 cup more cheese. Sprayed with butter-flavored spray oil and dusted with a little more garlic powder. I also added a little extra salt, personal preference. Very, very good.

Tomato Basil Linguine

This makes way too much for the two of us so I prepared one third of the recipe. I lightened it up a bit by eliminating the olive oil and added a little bit more tomato. Still rich and wonderfully delicious! I can't imagine what the additional olive oil could add besides a lot of calories. I will indulge with this dish again and again!

Spicy Sweet Potato and Coconut Soup

I made this weight watcher friendly by using butternut squash instead of sweet potatoes and light coconut milk. I thought it was fabulously, wonderfully delicious!!!! It tasted sinfully rich and was only 1 point per cup! I used an immersion blender to blend all the ingredients into a velvety soup. If you don't have an immersion blender and do a lot of soups get one - they are wonderful!

Fideo (Mexican Spaghetti)

Yummy, homey comfort food. Be careful not to over-brown the spaghetti. I think you could add things like green chilies and sliced black olives to make it into a wonderful main course. I didn't use the cheese at all in order to reduce calories, and I added a tablespoon of tomato paste, some cilantro and Tabasco. Yum!

Brunch Enchiladas

Well, I changed this QUITE a bit to make it vegetarian. I used vegetarian chorizo sausage (soyrizo or trader joes)and substituted it for half the ham. Then I added 1/ cup each green pepper, diced cooked potato, and chopped fresh tomato. I used 2% milk instead of half and half, egg substitute instead of egges, and reduced fat cheese. I didn't let it soak longer than 10 minutes, not having time to wait! Came out delicious but I kind of think it needed more of the egg milk mixture so I might increase that next time. The chorizo is wonderful in it.

Onion Bake

I lightened this recipe and it was still fabulously delicious. I will post the lightened version. OK now I will post it here because I still haven't successfully had a recipe I submitted be posted on this site. So here is the lightened ingredient list: 6 onions, thinly sliced 1/4 cup light marg 1 (10.75 ounce) can 98% fat free cream of mushroom soup (vegetarian substitution for chicken) 3/4 cup 1% milk ¼ cup sherry (really flavor improvement!) 4 oz. shredded reduced fat jarlsberg cheese 4 slices french bread, cubed For us it made 4 servings at 5 points per serving!
