Sweet Corn Cake

This recipe is now a staple in our home - whenever I plan on making something remotely Mexican, my husband gets a grin on his face and says, "how about that corn cake thing?" Needless to say, we never have leftovers.

Chewy Granola Bars

I was looking for a recipe that would be healthy and delicious - this one is it! My alterations were: 1/3 c. flax seeds, 1/3 c. sunflower seeds, 1/3 c. pumpkin seeds. I omitted the chocolate chips except for at the very end of the baking, I sprinkled chocolate chips over the top (maybe 1/4 cup minis) just to add some sweet. They came out really good! Thanks!

Lee's Incredible Momos

These came out really yummy! Dumplings are one of those things that I just crave sometimes, and these were made with things that I normally have in the pantry anyway! I steamed half like was suggested and then pan-fried half in about 3 Tbls. vegetable oil because I didn't want to wait another 30 mins. Both were equally delicious. The fried took about 7 minutes. Bean 'N' Rice Burritos

I made this tonight because I wanted an easy meal that I could make from things I already had in the kitchen. I made the same kinds of changes as others suggested - I sauteed an onion with fresh garlic and the cumin and I added about a teaspoon of Adobo seasoning as well. I also added a handful of frozen corn while it was simmering near the end. We wrapped it up in homemade tortillas with cheddar and they were delicious. I'll make this again.

Potato, Broccoli and Cheese Soup

I made this to bring to work for lunches this week and it is delicious! I used only 1 8-oz block of sharp cheddar, shredded and it was plenty. Other than that, I followed the recipe exactly. Thanks for sharing!!

Pasta with Scallops, Zucchini, and Tomatoes

I made this last night for my husband and I. It was delicious! My only changes were that I used a few more tomatoes (because I have an abundance in my garden) and since they were pretty watery, I added a Tbs tomato paste to thicken the sauce. The Scallops were great though, and the zucchini was a nice addition to fresh tomato sauce. Thanks for sharing! I would double this recipe and make it for a dinner party in the future.

Jalapeno Poppers I

These are delicious! I made them last night for the superbowl and made them once before to try them out. the changes I made were: Instead of dredging the entire chili in egg and then the corn flake cereal, I mixed a few Tbs of milk with about a 1/1/2 of panko breadcrumb. I added 1/4 tsp of cumin & 1/8 tsp of cayenne pepper to the milk/panko mixture. Then, I lined the cheese-filled chilis on a baking sheet and heaped a Tbs on each for a crunch on top. They went over very well! Thanks for sharing!

Golden Sweet Cornbread

This is the perfectly sweetened cornbread I was looking for! I made it along with chili for the Superbowl last night and people loved it. I doubled it but didn't make any changes to the recipe and it came out great!

Ricardo's Pizza Crust

We make homemade pizza a lot and I recently came across this recipe for the dough and its a huge hit. Its basically fool-proof if you use the bread machine and you can prep your toppings while the machine does the hard work! Because I think the crust is the best part of the pizza, we brush olive oil all around the edges and sprinkle garlic powder and kosher salt. Amazing. PS - I use regular old all purpose flour every time and have had no problems :)
