Coconut Custard (Zucchini) Pie

I was out of vanilla extract so I used almond instead. I made this with a homemade pie crust. It was sooo yummy. My husband didn't believe me that it had Zucchini in it.

Peanut Butter Vegetable Chicken Soup

This Soup is so great! I didn't have potatoes so I left them out and added eggplant, yellow bell pepper, and mushrooms along with all the vegetable listed. Soooo Yummy! I served it with Rice and cornbread. My husband loved it! I even told him about the peanut butter.

Middle Eastern Stuffed Zucchini

My husband and I loved this recipe! I made a few changes though. For one I cooked the rice before mixing it with the lamb and tomato paste. Also I couldn't find and ground lamb so I bought a lamb steak and cut it into small pieces. Other than that I followed the recipe exactly and it was wonderful!

Chicken Ranch Pasta Salad

Great Pasta Salad. I only made one major change, While I was sautéing the chicken I also sautéed the vegetables. I just am more found of cooked squash and zucchini than raw. Me and my husband both loved this recipe and will be making it again. But have decided to use red and yellow bell peppers instead of green and red.

Amazingly Good Eggnog

This was my first try at homemade eggnog and was a total success! I made one change though, neither me or my husband is fond of rum so we used Southern Comfort instead. It really is amazingly good. Will make again and again. I served it with homemade whipped cream and nutmeg on top.

Pumpkin Stew

This was the perfect way to use my pumpkin meat from my carved pumpkin. I changed a few things though. Instead of water I added beef bouillon broth, instead of beef bouillon granules I just crushed beef bouillon cubes. Which I think this is pretty much the same thing. I also added 1/2 cup peeled and cubed sweet potatoes, 2 cups peeled and cubed red potatoes, and a can whole kernel corn with red and green peppers. I used garlic salt instead of salt with the flour. I added the pepper, bay leaf, and thyme to the stew along with my own additions of parsley flakes, onion powder, vegetable supreme seasoning, paprika, and curry powder. It was a great success! I will be making this every year from now on. Thanks for the great recipe.

Toasted Pumpkin Seeds with Sugar and Spice

These turned out really great. I made a few changes. Instead of using vegetable oil I used olive oil. I didn't have pumpkin pie spice so I made my own with ground cinnamon, ground nutmeg, ground cloves, and ground ginger. They turned out amazing and several people asked for the recipe. Just a hint to others, I didn't listen to the directions and used a plastic spoon which promptly melted. Use the wooden spoon or you'll have to redo it like I did the first time.

Lemon Pecan Pilaf

I liked this recipe, it went really well with my recipe for lemon chicken. I did change a few things. Instead of chicken broth I used organic vegetable broth. I also doubled the butter, doubled the pecans, and added light brown sugar. With my alterations it had a tart lemon taste mixed with a sweet buttery flavor. I will be making this again. My way!

Waldorf Salad III

This was a decent base recipe. I cut the mayo in half and doubled the whipped cream. I added more sugar than was called for. I halved the celery and doubled the raisins. I also added pecans. My way made it great!

Walnut Apple Rice

This was an awesome base recipe! I changed a few things such as I didn't use instant rice but regular uncooked rice. Which meant that I had to double the liquids. Instead of water I used organic vegetable broth. I also choose to use apple cider. I skipped the salt and added ground ginger, ground nutmeg, ground cloves, and curry powder instead. Everyone loved it. I will definantely be making this again.
