Pork Butt Roast with Vegetables

A great base recipe that you can adjust to your taste. Seasoned heavily with cumin, thyme, salt, pepper, and inserted garlic into slits throughout the roast. I used about a 3 lb roast and it was perfect at about 3 hours. For veggies we did the potatoes, carrots, and mushrooms. It was delicious and we have plenty left over. Searing and then cooking in the broth made it perfectly tender. Again, this is a good base recipe. Spice it according to your likes and put in the veggies that interest you. I prefer base recipes over exact ones anyday! Two thumbs up!

Easy Polenta with Tomato Sauce

Delicious! Added 1 pat of butter, 3 cloves of garlic, and some pepper. Baked it without the sauce and served it with lamb chops. My husband and I both had second helpings. Wonderful texture, very easy to make, and a nice change from potatoes.

Apple Cole Slaw

Very versatile. I used red cabbage and left out the bell pepper. I substituted two tablespoons of fat free miracle whip for the mayonnaise (barely enough to coat it), increased the lemon juice, and added salt and pepper (omitted the sugar). The apples gave it a great flavor and extra crunch.

Spaghetti Carbonara II

Fairly easy to make. We used very thick cut bacon and added frozen peas to the pasta while it was sitting. We mixed the cheese and eggs together and added them to the pasta mixture after we had taken it off the heat. This prevented the scrambled eggs effect. Very tasty!

Grandma's Famous Salmon Cakes

Very easy and very tasty. I love the simplicity. I halved the recipe and got two larger cakes from a 6 oz can of salmon. I did add cajun seasoning. Served over rice with a runny egg over the top. At the start it looks like it will never hold together. Resist the urge to touch the cake and watch as the eggs firm up to hold it all together. Don't flip until the bottom is browned and firm.

Alfredo Sauce

I scaled the recipe to 4 servings. I used real butter, heavy cream, and fresh grated parmiagiano reggiano. The only things I did differently than the recipe stated was to omit the parsley (didn't have any), sauteed the garlic in the butter as it was melting, and stirred continuously. The sauce never separated. We served it over fettuccine, roasted broccoli, mushrooms, and chicken. Due to the high fat and calorie content it's definitely not going to be a frequent indulgence, but it was delicious! Simple, tasty, and quick!!

Addictive Sweet Potato Burritos

These were delicious! I scaled down the recipe to only make 4 burritos and wish I had made more. The changes I made were not using chili powder and using a big tablespoon of cayenne pepper and oregano, omitting the soy sauce and mustard, and using 1 can kidney beans and 1 can pinto beans (I had leftover beans). They were spicy and delicious. Even my husband enjoyed them. Next time I'll make a full batch and freeze the leftovers. We served them with sliced tomatoes, cilantro, and sour cream.

Old-Fashioned Pancakes

These were easy, forgiving, and delicious! I used oil instead of butter and had to use powdered milk and water. I had just returned home from vacation and the fridge was almost empty. I was still able to whip these up. I did add some vanilla and upon reflection realize that I totally forgot to add the salt. I didn't miss it. They were very puffy, light, and perfect. The batter does seem a tad thick, but they do not taste thick or gummy at all. I will make these instead of my normal buttermilk pancakes on occasion.

Best Chocolate Chip Cookies

I made this exactly as written, except that I didn't add any nuts. My go-to recipe product soft cookies and my husband was looking for something crispy and chewy. This fit the bill! They were simple to make, cooked in exactly 10 minutes (I used a rounded tablespoon to scoop out the cookies), and were delicious. For the last few batches I sprinkled some fine sea salt on top prior to baking. Delicious!

Polish Chicken and Dumplings

Just rating the dumplings. They are very easy and you do not need to be too precise. I use the broth from the chicken instead of water, and I skin the fat off the top of the broth and use that instead of olive oil. I scale the recipe down for two people and it makes enough for my husband and I to have dinner and lunch the next day. To make the base I just use onion, garlic, chicken, bay leaf, salt, and pepper. I do not use cream of anything soup.
