Black Bean and Corn Quesadillas

Great recipe! I make every couple weeks or so. Very yummy, easy, and healthy. I use whole wheat tortillas, but keep everything else the same.

Strata with Breakfast Strips and Gorgonzola

I like this recipe pretty well. I had all the ingredients on hand so I decided to make it for breakfast. I made a few minor changes- there's no way I could fit a whole loaf of bread into the recipe, so I used half a loaf. Double the amount of veggie bacon(I'll add even more next time. Added a few TBS of nutritional yeast flakes for extra nutrition, and instead of 6 whole eggs, used 4 whole plus 4 egg whites, to cut down on cholesterol. Hubby and I enjoyed this enough to probably make again, however it didn't wow us. It also doesn't look too pretty, so I probably wouldn't serve it to guests. Next time, I'll add more veggie bacon, and probably do only 1/2 c ricotta and 1 c gorgonozola instead, also use whole wheat bread instead of french to make it healthier, and probably add some Lawry's. Overall, it's pretty enjoyable and a nice change from a bowl of cereal every morning.

I absolutely love this recipe. I make it all the time, and eat at least half of it myself. I always double the filling, but other than that follow it exactly. So good!

Apple Crisp IV

I really liked this recipe. I halved it and used whole wheat flour instead of white. I couldn't fit all the apples into the pan though, so ended up using almost 1 cup less. My only complaint is that the apple filling seemed to be pretty dry. Maybe I'll put a couple TBS of water in it?

Hot Artichoke Spinach Dip

This recipe is soooo good! The only changes I made was using asiago cheese instead of romano, and marinated artichoke hearts, plus sprinkled some parmesan cheese on top. Hubby and I both loved it!

Cheesy Baked Eggplant

I made this for dinner tonight. Hubby and I think that its pretty yummy. The only changes I made was instead of brushing the eggplant with oil, I sprayed some crisco on it, and also added 1/3 c cottage cheese to the ricotta cheese mixture, and instead of fresh spinach used a box of frozen spinach. My only complaints about it was that the eggplant didn't seem completely cooked, and there was a lot of liquid at the bottom of the pan. Overall though, I'll definitely make again. =)

PHILLY Make-Ahead Spinach Phyllo Roll-Ups

I made these last night for my hubby and I. We both enjoyed it, but I think it needs just a couple changes. I used fat free cream cheese, and 1 cup of regular feta, plus 2 TBS of finely chopped sundried tomatoes. Next time, I think I'll add 1/4 c sundried tomatoes, plus about 1/2 c shredded mozzerella cheese, and probably some pepper. Other than that, its a pretty good recipe. =)

Apple Squares

I've made these twice in the last couple weeks. They are so yummy! Hubby and I eat them up within two days. The first time I used half whole wheat flour and half white, and the second time all whole wheat flour. It still tastes delicious and its just a bit healthier. I also use 1 large apple, not just a half cup. I'll definitely make this over and over!

Luscious Eggnog

This has a really good taste, but it turned out really thick for me. I followed the advice of a review that said to simmer the milk first, and then slowly mix in the yolks. I only had a few "scrambled egg" clumps, but it was easy to pick those out. My husband and I ended up eating it with a spoon, as it was so thick. Maybe it's because I didn't add the rum?

All-Time Favorite Sweet Potato Pudding

This is really yummy and easy to make. I only had a 40 oz can of sweet potatoes though, so I just added a bit extra of all the other ingredients. I also didn't have cloves, so I added some nutmeg instead. I thought it was just a touch too sweet though. Next time I'll probably add a bit of orange juice, to offset the sweetness. And since the recipe didn't say whether or not to drain the sweet potatoes, I drained most of the juice and put in about 1/3 cup. Overall, a fantastic recipe. =)

One-Pot Pasta with Tomatoes, White Beans and Pesto

Oh my goodness, this is incredible! Super easy and quick to make, and delicious! The only changes I made was using penne pasta instead of bow tie, 5 ounces of pesto instead of 7, and a blend of parmesan and romano cheese. Also, I'd say it makes more like 6 servings, not 4.
