Greens with Cannellini Beans and Pancetta

delish - ate this as a main course and it was very filling (plus so nutritious). My only thing was that the kale was still a bit "raw" tasting. I probably should have just let it cook longer, but otherwise it was great.

Roasted Root Vegetables With Apple Juice

Not bad. I didn't have parsnips, so I subbed carrots, but otherwise I stayed right to the recipe. I'm still not a fan of turnips and rutabagas, but this is probably one of the best ways to do them so that they are palatable.

Italian Style Flounder

I would give this a higher review, but I think according to the recipe, you are bound to over-cook your flounder. It probably only needs to be in the oven for about 20 mins, tops. The topping was great - I also used fresh basil, tomatoes and garlic, and topped with some fresh grated parmesan, but the fish itself was dry from being over cooked.

Butternut Squash Soup

I would give this recipe five stars, but I changed it slightly, so I can't give it a true review. I also roasted the squash first as others had. I used three medium sized squash and that was just enough. I also used only one 8oz package of cream cheese and it was plenty creamy. I cannot imagine using two - it would be way too rich, in my opinion. I also used real butter and low fat cheese and chicken stock, rather than bouillon. It was perfect for fall and squash season.

this was the perfect way to use all the fresh local vegetables we had been getting in our co-op share this summer. Hearty without being too heavy. The perfect vegetarian dish.

Easy Pesto

great, easy recipe. the perfect way to use and preserve all the basil I had at the end of the summer. I made this in big batches, then froze it - then I grab a little as I need it. It's like it's summer all year long!

Tomato Sauce

This is great! I had been looking for a recipe that started with real FRESH tomatoes so that I could preserve the delicious local tomatoes we'd been getting this summer. This is the perfect recipe - it's got a bit of spice and pepper, which I like and can be a great base for a lot of different things including spaghetti or pizza sauce. I will use this recipe over and over.

Shrimp and Veggie Stew

great way to use up some of my summer okra. the only thing that might have made this better is a little spicy sausage to compliment the shrimp. I served this over quinoa to incorporate a whole grain. Very hearty.

Lentil Quiche

wow! Really surprisingly good. I substituted zucchini for the broccoli, since it's in season, and I poured everything into a deep dish pie crust for a traditional quiche touch. Using a real pie crust made it so that there was too much egg mixture, though - so if I do this again, I'll cut the lentil and egg mixture in half, or else split the recipe between two pie crusts. If you have some zucchini lying around, try subbing it in this recipe - the combination was delicious. And I left out the tomatoes as other suggested - it was fine without them.

Pork Dumplings

Sooooo good. My only tip is to cut this recipe in half if you're not having a huge party. I used an entire package of wonton wrappers and had so much filling left over. I'm going to go back and buy some more wrappers and make the rest to freeze, though. These were delicious and tasted like the real thing from a Japanese restaurant.

Zesty Succotash

I take this recipe to parties all the time and get compliments every time. I add jarred jalapenos, additional cayenne pepper and green taco sauce to give it a little extra zip. I also add a can of lima beans, since I feel like they are necessary to call a dish "succotash."

Cauliflower and Broccoli Bake

This calls for you to cook the veggies so long that they have no taste left when it's all said and done. If I ever tried this recipe again, I would either par-boil the veggies for maybe two to three minutes, or I would steam them for about 5 before baking for about 15-20 minutes. As it is, they tasted like mush.
